SWEET MILK THREE EGG WHITE CAKE
2 1/4 c!. cake flour
2 1/2 tsp!. baking powder
3/4 tsp!. salt
1/4 c!. soft BUTTER and 1/4 c!. shortening
1 1/3 c!. sugar
1/2 tsp!. each almond extract and lemon extract or 2 tsp!. vanilla
3 egg whites, unbeaten
1 c!. milk
Grease two 8 inch layer pans, line with waxed paper, then grease paper!. Start oven 10 minutes before baking, set to moderate 375 degrees!.
Sift flour, measure, re-sift three times with baking powder and salt!. Cream butter and shortening with wooden spoon until smooth and shiny!. Add sugar gradually, creaming thoroughly!. Stir in flavoring!. Add egg whites in two portions and beat with rotary beater after each, until fluffy!. Then add flour and milk alternately in three or four portions, beginning and ending with flour, beat with wooden spoon until smooth after each addition!. Turn into pan!. Bake 20 to 22 minutes or until cake tests done!. Cool in pan on cake rack 5 minutes, then turn out on racks, quickly removing paper and invert!. When barely cool, spread with frosting of your choice!.

4 large eggs
3/4 cup milk
1/2 small onion
1/2 tsp Laury's Seasoned Salt
1/2 tsp garlic powder
salt and pepper to taste
butter (melted)
Mix together egg, milk, season salt, garlic powder!. Chop and dice onion and add to egg mixture!. Melt butter, add egg mixture and then scramble!.
If desired, add salt and pepper to finish dish!.

Poaching the Eggs:
6 eggs
4 cups water
3 tablespoons vinegar
4 cups lightly water
1/4 tsp salt
Place a sauce pan with the water and vinegar on the stove!. (No salt at this point)!. The salt will go in the warm water where we will place the eggs, before poaching!.
When the water begins to boil, turn the burner to low heat!. Ideally, you want the water to be at “almost boiling” point!. It’s imperative that the eggs be very fresh and cold! If not, the egg white will not surround the yolk in the proper shape!. Select the first egg, crack it and slide gently into a small custard dish!. Slide the egg into pan carefully!.
Leave the egg(s) in the water for 2-3 minutes, always keeping the water at just a simmer: 167 degrees F or 75C!. The egg white will begin to harden at 147 F or 65C!.
At this point, take the eggs out of the water and submerge them in a bowl of warm salted water!. This will quickly halt the cooking process!. The eggs should be round and smooth!.
Mornay Sauce:
5 teaspoons butter
2 tablespoons flour
2 cups milk
salt, pepper, nutmeg powder or grated nutmeg
1 egg yolk
1/2 cup cream
1 oz!. grated Parmesan cheese

Bake at 350 degrees for 45 minutes or until a knife comes out clean!.

1 lb!. bulk sausage meat

Spray Pyrex oblong pan with Pam!. Brown sausage in fry pan!. Break sausage up into small pieces!. Drain sausage of all fat!. Spread sausage in bottom of pan!. Beat eggs in large bowl!. Add water and milk!. Grate cheese and put over sausage!. Pour eggs over cheese and sausage!. Bake at 350 degrees for 1/2 hour Done when eggs are firmly set!.
Can be made the day before and refrigerated overnight!. Good for breakfast or brunch!.

2 tbsp!. milk
1/4 c!. ketchup
1 tsp!. dried parsley
3-4 slices bread (broken into crumbs)
FILLING:
4 oz!. shredded Mozzarella
1-2 tbsp!. Parmesan cheese
GLAZE:
3 tbsp!. ketchup
2 tbsp!. mustard
Prepare meat mixture; mix well!. Using slightly more than half the mixture form 2 large patties (or oval), about 1 1/2" thick and place in baking dish!. Using fingers, form a "well" in the patties approximately 1/2" to 3/4" deep and to within 1" of edge!. Place the shredded Mozzarella and the grated cheese in this "well"!. Using the remaining meat mixture form another patty that will cover the cheese filled well!. Top the loaf with the glaze!. Add about an inch of water to the baking dish to surround the loaf and bake in oven at 350 degrees for 1 hour!.
