Does anyone have a recipe for these ethnic dry rub/spice blends?!


Question: Does anyone have a recipe for these ethnic dry rub/spice blends!?
I just need it for two!. Caribbean and Southwestern!. I know that Allspice is widely used in Caribbean cuisine and Chipotle peppers are used in Southwestern cuisine!. This is all I have been able to discern though!. All of your help is greatly appreciated!.Www@FoodAQ@Com

Caribbean Rub
Ingredients

6 tb Garlic; minced
2 tb Brown sugar
6 tb Onion; minced
4 1/2 ts Minced fresh thyme
6 tb Dried minced onion
4 1/2 ts Cinnamon
2 tb Allspice
1 1/2 ts Nutmeg
1 tb Dried ground chipotle
1/2 ts Ground habanero
2 tb Hungarian paprika
2 Lemons; zest of
Instructions for Caribbean Rub or Jerk Rub

In a bowl combine all ingredients!.

I LOVE tHIS RECIPE!!!! but don't worry if you cannot get hold of every single ingredient, it is the perfect balance regardless if you havent found hungarian pepper

Southwestern:

Ingredients:

* 2 dried chipotle peppers (use 3 to heat it up a little)
* 3 tablespoons black pepper
* 2 tablespoons dried oregano
* 1 tablespoon dried cilantro leaves
* 1 bay leaf
* 1 teaspoon cumin
* 1 teaspoon onion powder
* 1 teaspoon ground dry orange peel

Preparation:
Combine all ingredients in a spice mill or blender and grind until even and fine!. Store in an airtight jar!. Will store for about 6 months in the freezer!. Great for brisket, steak, and pork!. Www@FoodAQ@Com

CARIBBEAN RUB


1 teaspoon sugar
1 teaspoon dried minced onion
1/4 teaspoon salt
1/2 to 3/4 teaspoon crushed red pepper
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground black pepper
1 teaspoon dried thyme leaves, crushed


Cooking Directions
In a small bowl, stir together the spices!.

Rub spice mixture evenly over meat, coating the entire surface!.

Cook meat as desired, or cover and refrigerate for 15 minutes to several hours to boost flavors!.
southwestern dry rub
* 3 teaspoons chili powder
* 2 teaspoons paprika
* 1 teaspoon cayenne
* 1 teaspoon cumin
* 1 teaspoon coriander, ground
* 1 teaspoon granulated garlic
* 1 teaspoon kosher salt
* 1 teaspoon cracked black pepper
