Mmm!.!. mellanzana parmigana - one of my all time favourite things!!

Eggplant (also known as aubergine or brinjal) can be sliced either way for this dish, or any other dish!.

The only downfall with eggplant is that is sucks up fats like butter or oil like a sponge so I usually put it in raw, or splash some olive oil over it on a try and drop it into the oven!. Compensate for putting it in raw by making the tomato sauce just a little thinner!.

Enjoy!Www@FoodAQ@Com

Round, like a cucumber, not more than 1/2" thick or they don't cook nice!. Bread and fry them first, then layer with your sauce and cheese, really good!. :) (Don't peel it, I never do!.)

Zuccini, those huge ones that are around now, same thing, and it's just as good!. Www@FoodAQ@Com

You cut it across into circles!. You can usually see seeds in there, sometimes greenish, sometimes brownish!. Then dust w/ flour, dip in egg wash, then dip into seasoned bread crumbs and fry quickly!. YUMMY!Www@FoodAQ@Com

You can cut it either way, the long way will cover a larger area in the pan as opposed to round slices!.Www@FoodAQ@Com

Cut across, then lightly salt slices on a paper towel!. This will make them sweat out water=proceed with recipe!.Www@FoodAQ@Com
