Answers:
To get steak to the well done stage, it is a matter of touch, or in fact firmness!. Try pressing the flesh between your thumb and your first finger!.!.!. see how that feels!? That is how much 'give' a well done steak should have!.!.!. use the back of a knife to press down on the meat and if it has about the same amount of 'give' then it is medium to well done!. If you like it really well done but not too dry, then it should be just a bit firmer!. The less 'give' it has, the dryer or more cooked and often, tough, the meat will be!.

Lots of things go into judging the cooking time, how high the temp, how thick the cut, the age of the cut, how lean or fatty it is!.!.!. this method is the surest way!. Enjoy!.Www@FoodAQ@Com

With thin steaks it is going to depend a lot on your heat source and how your cooking your steaks!. You really need to learn to cook to touch!. The firmer the meat feels the more well done it will be!. If in doubt when you have the steaks cooked to where you think they are done cut into the thickest one you have to make sure its well done!. If it is the chances are the rest are to!. Www@FoodAQ@Com

I normally heat the pan for 4 mins, then cook the steak for 4 mins on each side - works for us every time :)
