Home made ice cream help?!


Question: Home made ice cream help!?
My daughters and I use a home ice cream maker from time to time and it works out well!. We have a lot of fun seeing what we can create!. About the only "problem" we have when we make ice cream (besides the fact that we always want more then we make) is that sometimes it comes out a little "fatty"!. By that I mean that the ice cream tends to have fatty globs in it!.

Now, I was watching one of those food shows the other night and they talked about how it is made professionally and in those cases they use an emulsifier to keep it from separating!. They didn't mention what it was that they used but does anyone know what they could be referring to and is it something I can get myself for home use!? Www@FoodAQ@Com

I just bought a box of Junket (honest that is the name of it) ice cream "stuff"!. I call it stuff because when I read the package it seemed to be the "stuff" that would take care of the problem you are describing!. It is in the jello section, and to be honest it was in a gourmet type store!. You could probably get it at Cost Plus or an upscale food store!. Anyway, it came in the three flavors, and I was thinking I would like to make pumpkin ice cream for the holidays and that would insure that it was creamy throughout!. I bought vanilla, and I am going to make it next month!. It requires two boxes to make a gallon, and I believe it is an emulsifier!. That just keeps the fat globules surrounded by the protein cell structures!. As the ice cream mixture is mixed by the dasher, this stuff (hopefully) makes sure all of the little fat globules stay small and separated!. If they come close to other globules this emulsifier just chases them away!. That is just a joke!. :) Hope this helps a bit!. Good luck with your ice cream!. Www@FoodAQ@Com
