What are some vegetable recipes?!


Question: What are some vegetable recipes!?
I want to start eating more vegetables but I don't like raw vegetables (except salad), I like cooked vegetables, but the only way I usually eat vegetables is covered in cheese!. What are some easy recipes for cooked vegetables like broccoli besides just butter and salt or cheese!?!? Thanks!!Www@FoodAQ@Com

This is going to sound like a really lame recipe, but it's really good!.

Rice and veggies!.

Cook brown rice

steam veggies!. Mix!. :]

I also like this one:

Preheat oven to 350

Cut broccoli into florlets

Put on baking sheet ontop of a piece of tinfoil!.

Drizzle with olive oil, garlic powder, and salt!.

cover the broccoli and bake for roughly 15 mins!. or until tender!.Www@FoodAQ@Com

Instead of cheese, try these sauces:

Blender Hollandaise Sauce
1 cup butter
4 egg yolks
? teaspoon salt
? teaspoon sugar
? teaspoon Tabasco
? teaspoon dry mustard
2 tablespoons lemon juice
Combine all ingredients except butter in blender!. Melt butter until bubbly and very hot!.

With blender turned on, slowly pour hot butter into top of blender and continue to blend until all incorporated!.

This sauce keeps well for several days in the refrigerator!. To reheat, place in double boiler over hot, not boiling, water until heated through!.

Excellent served over vegetables, seafood and egg dishes!.

Citrus Glaze for Chicken, Fish or Vegetables
This tangy glaze adds a citrus flavor and moisture without additional fat!.
1 teaspoon lemon or lime juice
1 teaspoon grated zest, lemon or lime
? cup chicken broth
1 tablespoon fresh parsley, chopped
1 tablespoon sugar
2 teaspoons cornstarch
In a microwave safe bowl, combine all ingredients!. Whisk to mix!. Microwave 1 -2 minutes, until clear and thickened!.

Some vegetable recipes:

Easy Zucchini and Squash
2 - 3 zucchini, scrubbed and trimmed
2 - 3 squash, scrubbed and trimmed
olive oil
salt and pepper
Cut each zucchini and squash lengthwise!. Drizzle olive oil on bottom of large platter, place vegetables cut side down in oil!. Let marinate at least 20 minutes!. Turn over and season with salt and pepper!.

Heat large skillet over medium high heat, drizzle with olive oil!. Placed vegetables in skillet!. Cook about 5 minutes each side!.

Can also be prepared on the grill -- even better!

Italian Vegetable Medley
1 bag frozen Italian vegetables, steamed
3 tablespoons olive oil
1 tablespoon balsamic vinegar
? cup Parmesan cheese, grated
salt and pepper

try potatoes au gratin!. not too healthy but it does the trick!.!.
4 russet potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups milk
1 1/2 cups shredded Cheddar cheese

Preheat oven to 400 degrees F (200 degrees C)!. Butter a 1 quart casserole dish!.
Layer 1/2 of the potatoes into bottom of the prepared casserole dish!. Top with the onion slices, and add the remaining potatoes!. Season with salt and pepper to taste!.
In a medium-size saucepan, melt butter over medium heat!. Mix in the flour and salt, and stir constantly with a whisk for one minute!. Stir in milk!. Cook until mixture has thickened!. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds!. Pour cheese over the potatoes, and cover the dish with aluminum foil!.
Bake 1 1/2 hours in the preheated oven!.

You have to make this

Broccoli Cheese Casserole
(Prysnac Serbia )

6 unbeaten eggs
2 lb small curd cottage cheese
6 T flour
1/2 lb processed cheese, diced
1/4 lb soft butter
1 pkg frozen broccoli, thawed abd chopped
2 green onions chopped

Layer in larger mixing bowl
Stir until well blended
Pour into greased 9 x 12 baking dish
Bake at 350
1 hour

Should be golden and bubbly
Let sit for 10 min
Serves 10 -12





Colorful Veggie Bake


2 packages (16 ounces each) frozen California-blend vegetables
8 ounces process cheese Velveeta), cubed
6 tablespoons butter or margarine, divided
1/2 cup crushed butter-flavored crackers (about 13 crackers)

Prepare vegetables according to package directions; drain!. Place half
in an ungreased 11-in!. x 7-in!. x 2-in!. baking dish!. In a small
saucepan, combine cheese and 4 tablespoons butter; cook and stir over
low heat until melted!. Pour half over vegetables!. Repeat layers!. Melt
the remaining butter; toss with cracker crumbs!. Sprinkle over the
top!. Bake, uncovered, at 325° for 20-25 minutes or until golden
brown!. Yield: 8-10 servings!.






Tasty Vegetable Casserole----

1 10 ounce package frozen broccoli
2 10 ounce packages frozen cauliflower
1 10 ounce package brussels sprouts
small jar Cheez Whiz
1 cup cream of mushroom soup
1 large can mushrooms, drained
Cook vegetables until almost done!. Combine cheese with soup and heat!. Pour over vegetables in a large greased baking dish!. Bake at 350°, uncovered 30-40 minutes or until it bubbles!.






Veggie Casserole
1 box frozen chopped broccoli
1 box chicken Rice-A-Roni
1 large bag shredded Cheddar cheese
4 tablespoons margarine, soft
1 box frozen chopped asparagus
1 large bag shredded mozzarella cheese
2 cloves garlic, diced, or garlic powder to taste
Italian-flavor bread crumbs

Prepare Rice-A-Roni according to directions on box!. Boil the vegetables and drain!. While rice and vegetables are still warm, mix cheeses, garlic and margarine together!. Add rice and vegetables!.

Grease large casserole and add mixture!. Top with bread crumbs!. Bake for 30 to 40 minutes at 350 degrees F or until cheese is melted!.

I am mushroom hunting lately, and eating them in many different ways!. Here's one way to eat mushrooms!.

Mix up in a pan!.!.!.

Olive Oil, fresh mushrooms, zucchini, onions, some minced garlic, salt and pepper!. Add it to rice!.

Get fresh zucchini!. When it's cooked, you'll be surprised at how yummy it can be!. slice it about as thick as your mushrooms or thicker!. Don't cook all the way through, just until the outsides of the vegetables are softened!. Try to get the onions clear and brown before adding the mushrooms and zucchini!. Fully cooked onions taste sweet when browned!.

So easy and so delicious!

Most everyone that has ever eaten this LOVES it!. It is Pepper Zuchinni!. Many people say ugh I hate zuchinni but when this taste this their whole attitude changes!!

Pepper Zuchinni
Put a 1/2 cube margarine in 10 inch fry pan on medium!. Slice enough mild white onions to cover in rings the bottom of the pan!. Slice enough zuchinni til the pan is heaped!. Stir and saute til onion is clear and zuchinni are limp!. Sprinkle 1 Teaspoon of fresh ground pepper over the vegetables and stir well!.

Now either fry 4 strips of bacon very crisp to crumble over or buy the Kraft Bacon Cheese spread - you know in the little jars/glasses you save to have your tiny tots drink out of!?!?

If you fry your own bacon just crumble it over the vegetables and add either a 4 oz portion of cheese whiz or American cheese and stir it all in!. OR if you are using the Kraft Bacon cheese spread then just put the whole jar over all!. Continue stirring til cheese is melted!.

Then pour or spoon into a casserole and I usually lay a square or 2 of American Cheese over it for decoration and heat for 15-20 minutes!. Sometimes I crumble more bacon over the top too!!

Serve hot!. Good luck!

The easiest and best way to get more veggies in your diet (if you buy frozen) is to buy the steamer bags!. They are cheap (under $2 for a serving of 4) and come already prepared with sauce, spice, etc!.

A lot of the recipes provided add a LOT of calories!. Try the simple stuff first and you can always cover a lot of veggie taste by tossing with marinara!.Www@FoodAQ@Com
