Okay, what to make with chicken breasts and Mexican ingredients?!
I have
chicken breasts
canned tomatillos
basic Mexican spices
fresh hot peppers
shredded cheddar/mozza cheese
achiote seasoning
I'm looking for something very yummy for dinner!. I've never made anything with tomatillos before!. What do you suggest!?

Perfect, make bruschetta chicken!
There's like a million different ways to do it and they all turn out basically the same so I'll just give you an Idea!. Make bruschetta, which basically consists of finely chopped tomatoes, some lime juice, finely chopped onion, garlic, green onion, yoiu could add mexican spices and a bit of hot pepper, some olive oil, salt and pepper, and I use pesto (or fresh basil) and tomato salad dressing as well but it's up to you!. Put all that stuff in a bowl and mix it well, it should be moist (lots of juice from the tomatoes and lime!.!.!. ), and put it in the fridge for a couple hours, mixing it a couple time (just basically marinates it all together!.
Lay out the chicken breasts in a fairly flat layer in a glass dish or on a baking tray lined with tin foil (or you can do it on the bbq in like, a tin pie plate or some of those tin foil tray things!.!.)!.!.!.!.
Anyways, whatever your method of cookiing, lay out the chicken breasts flat in one layer, then put a layer of the bruschetta over top (as much as you want!.!.!.) then a layer of the cheese!. It's SOOOO GOOD!.
And you can make bruschetta bread as well if you have leftover bruschetta mix!.
Or you could whip up chicken fajitas with lots of veggies!.!.!. Or quesadillas!.!.

I say a green chicken chili (or chili verde)!.!.!.you have everything!.!.!.
***Grilled Chicken Chili Verde***
1 1/2 pounds chicken cutlets
Extra-virgin olive oil, for drizzling plus 2 tablespoons
1 jalapeno pepper, seeded and chopped
1 onion, chopped
3 cloves garlic, grated
18 to 20 tomatillos, peeled and coarsely chopped
1 cup heavy cream
1 chipotle in adobo, mashed into paste
2 teaspoons adobo sauce
2 limes, 1 zested, 1 whole
2 to 3 cups chicken stock, depends upon how thick you like your sauce
1 1/2 teaspoons ground cumin
1/4 cup cilantro or flat-leaf parsley, divided
3 tablespoons fresh mint, a generous handful
1 sack white corn tortilla chips
1 cup shredded Chihuahua or Monterey Jack cheese, divided
2 tablespoons finely chopped chives
Directions
Heat broiler and grill pan to high!.
Coat the chicken with a healthy drizzle of oil and season with salt and pepper!. Grill chicken 3 minutes on each side!. Chop into a bite size dice and reserve!.
Heat 2 tablespoons oil in a medium soup pot over medium-high heat!. Add the jalapeno, onions and garlic and cook a few minutes while you process the tomatillos into a chunky salsa consistency in food processor!. Add the tomatillos to onions and cook 5 to 6 minutes!.
While the tomatillos cook, in a small pot heat cream with chipotle and the zest of 1 lime over low heat!. Reduce 10 minutes!.
Add chicken stock to chili!. Stir in the chicken and season with cumin!. Simmer 5 to 6 minutes and stir in peppers, 2 to 3 tablespoons of chopped cilantro and the mint!. Turn heat off!.
Add the juice of 2 limes to the chili and stir!.

Spoon the mixture into tortillas and cover in cheese!. Fold in half and lay flat on baking sheet!.
Bake on 375 until tortillas are crisp!. (Add butter or spray some olive oil on the outside of the tortillas to make them crisp faster and give them an excellent flavor)

i would throw it in a crock pot and after 6 hours on high
throw the cheese on with 30 minutes to go and serve with tortilla and sour cream
