*****Spicy Pork Chili
1 1/2 pounds boneless pork loin, cut into 1-inch cubes
1 medium onion, coarsely chopped
1 medium green pepper, coarsely chopped
1 clove garlic, minced
1 tablespoon vegetable oil
1 tablespoon all-purpose flour
2 (16-ounce) cans whole peeled tomatoes, crushed
1 (16-ounce) can red kidney beans
1 (8-ounce) can tomato sauce
3 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese (6 ounces)
Warm flour tortillas (optional)
In a 4-quart Dutch oven cook pork, onion, green pepper, and garlic in hot oil until pork is browned!.Stir in flour, mixing well!. Add the remaining ingredients, except cheese and tortillas!. Simmer, uncovered, one hour!.Top each serving with some of the cheese!. Serve with tortillas, if desired!.
********Spicy Ham Chili-----Smoky ham joins all the usual suspects for a slowly cooked spicy stew that’s great served over hot rice!.
1 pound ham, cut into ?-inch cubes
2 tablespoons olive oil
1 large onion, chopped
1 jalapeno chile, seeded and minced
2 cloves garlic, minced
2 28-oz!. cans chopped tomatoes, undrained
1 10-oz!. package frozen whole kernel corn
1 15-oz!. can black beans, rinsed and drained
1 green pepper, seeded and diced
2 tablespoons brown sugar
1 tablespoon ground cumin
1 ? teaspoons ground coriander
1 tablespoon Worcestershire sauce
In small skillet, heat olive oil and sauté onion, jalapeno and garlic until onion is tender, about 4 minutes!.Place onion mixture in 4-5-quart crockpot, add remaining ingredients and mix gently!. Cover and cook on High setting 4 hours!. Serve over hot rice, with sour cream, shredded Cheddar cheese, and chopped fresh cilantro, if desired!.

EASY ONE-POT CHILI

1 1/2 lbs!. ground beef
1 large onion, chopped
1 can tomato juice (NOT V-8)
1 large can diced tomatoes
3 cans dark red kidney beans
chili powder
salt and pepper

Brown ground beef with salt and pepper and chopped onion; drain!. Add tomato juice, tomatoes (go ahead and throw in the juice from these cans, too) and beans, with liquid!. bring to simmer, then add chili powder until it turns a rich, reddish-brown color!. Allow to simmer for a while longer, then taste!. If it doesn't have enough kick for you, add more chili powder, or use what I use; A few splashes of habenero sauce!. If all you can taste is the tomatoes, add a little more salt, or a few pinches of table sugar!.

* 2 pounds ground beef

DIRECTIONS

1!. In a skillet, cook beef over medium heat until no longer pink; drain!. Transfer to a slow cooker!. Add the next nine ingredients!. Cover and cook on low for 8-10 hours or on high for 4 hours!. Garnish individual servings with cheese if desired!.


This is my go-to chili recipe!. Can change the amount of chili powder and the kinds/amount of peppers to taste!. Enjoy :)Www@FoodAQ@Com

TEXAS CHILI

2 lb very lean ground beef or diced chuck steak
7 T chili powder
1 T ground cumin
2 t paprika
1 onion, finely chopped
2 t salt
1 1/2 t cayenne pepper
2 T masa
1 8oz!. can tomato sauce
1 15oz!. can red beans (optional)
1 15oz!. can tomatoes(whole or diced, drained) optional

Brown ground beef and drain!. Stir in tomato sauce and 2 cans of water!. Mix all ingredients except cayenne pepper and masa!. Simmer 30 min!. Add as much pepper as desired!. Mix masa and 1/4 c warm water!. Add to chili and stir well!. Add Tomatoes or beans if desired!. Simmer 20 min!.
Of course, feel free to add more or less pepper!. I usually serve it over rice or with tortilla chips, sometimes both!. Enjoy

GUNSMOKE CHILI

2 lbs coarsely-ground lean beef or venison
2 large green bell peppers, chopped
2 fresh jalape?o chiles, chopped
2 medium onions, chopped
2 ribs celery, chopped
6 cloves garlic, minced or pressed
1/3 cup chili powder
1 tbsp!. salt
1 tsp!. cumin
1 14!.5-oz!. can diced tomatoes
1/4 tsp!. dried ground hot peppers of your choice: (cayenne, jalape?o, habanero, etc!.)
2 bay leaves
1 15-oz!. can tomato sauce
6 cups water or beef broth
2 15!.5-oz!. cans kidney or pinto beans

Sauté meat, bell peppers, fresh Jalape?os, onions, celery, and garlic in a Dutch oven with a small amount of oil!. Drain!. Stir in all other ingredients except beans!. Cover and simmer one hour, stirring occasionally!. Add beans and simmer another 15 minutes!. Makes about a gallon of the tastiest, most satisfying chili you ever ate!.
For hotter chili, add more peppers!.
