Gourmet Mushroom Risotto --



INGREDIENTS
6 cups chicken broth, divided
3 tablespoons olive oil, divided
1 pound portobello mushrooms, thinly sliced
1 pound white mushrooms, thinly sliced
2 shallots, diced
1 1/2 cups Arborio rice
1/2 cup dry white wine
sea salt to taste
freshly ground black pepper to taste
3 tablespoons finely chopped chives
4 tablespoons butter
1/3 cup freshly grated Parmesan cheese



DIRECTIONS
In a saucepan, warm the broth over low heat!.
Warm 2 tablespoons olive oil in a large saucepan over medium-high heat!. Stir in the mushrooms, and cook until soft, about 3 minutes!. Remove mushrooms and their liquid, and set aside!.
Add 1 tablespoon olive oil to skillet, and stir in the shallots!. Cook 1 minute!. Add rice, stirring to coat with oil, about 2 minutes!. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed!. Add 1/2 cup broth to the rice, and stir until the broth is absorbed!. Continue adding broth 1/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes!.
Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan!. Season with salt and pepper to taste!.

Wild Mushroom Sauce --



INGREDIENTS
4 tablespoons butter
1/4 cup finely chopped shallots
2 ounces portobello mushrooms, sliced
2 ounces crimini mushrooms, sliced
2 ounces shiitake mushrooms, sliced
2 ounces morel mushrooms, sliced
2 ounces chanterelle mushrooms, sliced
1/2 cup red wine
6 fluid ounces beef demi glace
salt and freshly ground black pepper to taste



DIRECTIONS
Melt butter in a saucepan over medium heat!. Saute shallots briefly, then stir in all of the mushrooms!. Saute until tender and translucent, about 3 minutes!. Pour in red wine, and simmer for 3 minutes!. Stir in demi glace, and simmer for 6 minutes, or until sauce has thickened!.

Christmas Brunch Casserole --



INGREDIENTS
1 pound bacon
1 tablespoon butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese



DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C)!. Grease a 9x13 inch casserole dish!.
Place bacon in a large, deep skillet!. Cook over medium high heat until evenly brown!. Drain and set aside!. In a separate skillet, melt the butter and fry onions and mushrooms until tender!.
Place potatoes in bottom of prepared dish!. Sprinkle with salt, garlic salt, and pepper!. Top with bacon, then onions and mushrooms!.
In a large bowl, beat eggs with milk and parsley!. Pour over casserole!. Top with grated cheese!. Cover and refrigerate overnight!.
Bake in preheated oven for 1 hour or until set!. If preparing and baking the same day, cook for 45 minutes!. Www@FoodAQ@Com

Mushroom Tarts

3/4 cup chopped onion
2 cans sliced mushrooms
2 eggs -- beaten
3/4 cup sour cream
2 drops Tabasco sauce -- or more to taste
1 dashes pepper
24 small pastry shells

Sauté onion for about 3 minutes!. Add mushrooms and sauté 2 minutes!. Spoon into uncooked pastry shells!. Combine remaining ingredients and spoon over mushroom mixture in shells!. Bake at 400F for 10 minutes!. and then reduce heat to 375and bake for 10 minutes!. more!.






Red Lobster's Crab Stuffed Mushrooms

1 pound fresh mushrooms, approximately 35?40

1/4 cup celery, finely chopped

2 tablespoons onion, finely chopped

2 tablespoons red bell pepper, finely chopped

1/2 pound crab claw meat

2 cups oyster crackers crushed

1/2 cup cheddar cheese, shredded

1/4 teaspoon garlic powder

1/2 teaspoon Old Bay Seasoning

1/4 teaspoon black pepper, ground

1/4 teaspoon salt

1 egg

1/2 cup water

6 white cheddar cheese, slices

1) Preheat oven to 400 degrees

2) Saute celery, onion, and pepper in butter for 2 minutes, transfer to a

plate and cool in the refrigerator

3) While vegetables cool, wash mushrooms and remove stems

4) Set caps to the side and finely chop half of the stems!. Discard the

other half of the stems or use elsewhere

5) Combine the sauteed vegetables, chopped mushroom stems, and all

other ingredients (except cheese slices) and mix well

6) Place mushroom caps in individual buttered casseroles or baking

dishes (about 6 caps each)

7) Spoon 1 teaspoon of stuffing into each mushroom

8) Cover with sliced cheese

9) Bake in oven for 12?15 minutes until cheese is lightly browned!.

Mushroom Parmesan

1 lb!. cleaned mushroom (portebella is wonderful, any firm variety will do)
2 C marinara sauce
2T butter, cubed evenly plus 1 T butter
1 C grated parmesan (or parmesan and mozzarella mixed)
2 T olive oil
1 T Italian herb (I like rosemary)
salt & pepper

Heat olive oil and butter in saute pan until butter melts!. Add mushrooms and sear one side for 1-2 minutes or until golden on bottom!. Season tops of mushrooms with salt & pepper!. Spread 1/2 marinara in glass baking dish and preheat oven to 400 degrees!. Add mushrooms with cooked side down!. Top with remaining marinara!. Heap small spoonfuls of cheese on each mushroom or over tops if using small ones!. Sprinkle with herb and butter pieces!.

Pasta with Button mushrooms!.

Fry up some pieces of bacon!. Remove once cooked!. In same pan fry up strips of chicken!. Remove after done!. In same pan add button mushrooms!. Season with salt and pepper!. once brownish, add bacon, and chicken!. Mix all that with rose sauce (a mix of red and white sauce) or with just any pasta sauce!. i like pasta with mushrooms , milk and cheese!.!.!. very simple, cook the mushrooms with lil salt into the microwave for 1!.30 minutes, then wash them with cold water and put them in the microwave again with the milk and parmesano cheese, cook it for few minutes until u see the milk start boil !.!.!. add lil of corn flour solved in cold water !.!.!. cook it for few seconds !.!. and voila !!! add this to ur favorite pasta =)Www@FoodAQ@Com
