Question: What is your Main dish that you cook the best, what is your little secret to it's goodness!?
Answers:
Believe it or not, it is my meatloaf!. It turns out so moist and full of flavor!. There are 2 secrets I will share with you!. One is the combination of bread crumbs and romano cheese, this lends to the right consistency!. I think the problem with meatloaf is that sometimes people make it to dry but when you use the right ingredients and obtain a semi-firm product, turns out great!. The other secret to this, is the glaze on top!. Adds a bit of sweetness to the dish, not to much just the right amout!.

Meatloaf

1 pound ground chuck
1 pound lean ground beef
2 eggs
1 small sweet onion chopped
1 large green pepper chopped
2 garlic cloves minced
2 tbs butter
1 tbs olive oil
1 cup toasted bread crumbs
1/2 cup grated Romano cheese
8 oz can tomato sauce
1/4 cup ketchup
1 tsp salt
1 tsp pepper

Glaze:
2 tbs brown sugar
1/2 cup ketchup
2 tbs Worchester sauce

Heat large saute pan on medium-high heat!.
Add olive oil and butter!. Saute peppers & onions
6 minutes, add minced garlic, saute 3 minutes!.
Season lightly with salt & pepper!. Cool in glass
bowl to room temperature!.

Heat oven to 350 degrees!.

Set eggs out for 10 minutes!. In large mixing bowl,
add ground sirloin, lean ground beef, bread crumbs,
Romano cheese, tomato sauce, ketchup, eggs,
sauteed peppers, onions, & garlic!. Add salt & pepper,
mix ingredients, if mixture seems a bit loose,
add more bread crumbs!.

In a glass 13 x 9 dish, turn mixture into pan, mold
to a 3 inches high by 9 inches long shape!. Mix glaze
ingredients in bowl!. Spoon on half, spread evenly!.
Place in oven, bake 45 minutes!.

After 45 minutes, spread on remaining glaze,
return to oven for 10 minutes!. Then turn oven to
broil, cook 5 minutes!.!.!.!.this will set the glaze with a
light caramelized crust!.

I like to bake a lot! put a little extra vanilla in your cakes!
with pie crusts, put some egg yolk on it before baking, it will make it glossy!
with all recipes follow exactly what the recipe says to put in and what to add first etc!.!.!.
if you put to much salt in a soup or something alike, put a peeled potato in and it will absorb the salt!

Nutmeg in sauce sounds like a brilliant idea!

I love to add either 1/4 tsp crushed instant coffee to my brownies (just put the granules in the palm of your hand then crush with the index finger of your other hand to a course powder) - or - 1/4 tsp cinnamon to brownies makes for a hint that most people can't quite name!.

Add a little nutmeg to your spaghetti sauce even if you buy it in the jar!. It gives a a little kick and you wonder what is in the sauce that makes it so good!. also try to incorporate toasted pine nuts in your sauce, salads etc etc etc!. Purchase them raw and toast them yourself by heating them in a skillet until golden brown!.

Honey Mustard Pork Loin!.

I just mix some honey and mustard (not dijon), a pinch of salt and pepper, and rub it on the loin before I bake it!. then bake about 2 hours!. Reapplying more honey mustard sauce about half way through and about 10 min before removing from the oven!.Www@FoodAQ@Com
