Recipes with pancetta?!


Question: Recipes with pancetta!?
I have some pancetta that needs using up - what can I make with it!? Things I have in the fridge include:

chedder cheese
stir fry veg (but I had stir fry last night; don't want it again)
potatoes
mushrooms
onions
garlic

What can I make (and how do I make it!?)!. I don't mind going to the shop but nothing too fancy and expensive!!Www@FoodAQ@Com


Answers:
Make baked potatoes!.

Saute mushrooms, pancetta, onions and garlic in skillet!.

When potatoes are done - take out insides and stuff with pancetta filling!. Top with cheese!.

Place back in oven until cheese melts!.

Ingredients:
2 tablespoons oil
3/4 cup chopped onion
1 1/4 teaspoon garlic, minced
1 slice pancetta bacon, diced
4 cups water
1 cube chicken bouillon
4 potatoes, thinly sliced
1/4 teaspoon crushed red pepper
1/2 cup baby spinach chopped
1/3 cup heavy cream

Preparation Place 2 tablespoons of oil in skillet !. Add onions, garlic, pancetta!.

In 4 quart saucepan place water, bouillon cube and potatoes, cook till potatoes are tender!. Season with salt and pepper to taste!. Add crushed red pepper!.

Cook for 20 minutes!. Then add cream!. Cook 10 more minutes and serve!.Www@FoodAQ@Com

Make a risotto with it!. Boil a kettle and make a pint of stock or just use water!. Fry an onion in some butter!. Add the pancetta and fry that!. Add 100g rice (more if you are very hungry)!. Add the stock (or water) a ladleful at a time!. Add the mushrooms when the rice is nearly cooked!. Sprinkle with grated cheese!.

*Spaghetti Carbonara with Leeks and Pancetta
8 ounces uncooked spaghetti
1/2 cup (2 ounces) finely grated Parmigiano-Reggiano cheese
1/4 teaspoon black pepper
1/8 teaspoon salt
1 large egg
1 large egg white
1/2 cup chopped pancetta (about 2 ounces)
2 cups thinly sliced leek (about 2 large)
2 garlic cloves, minced
2 tablespoons chopped fresh flat-leaf parsley
Cook pasta according to the package directions, omitting salt and fat!. Drain, reserving 1/4 cup cooking liquid!.Combine cheese, pepper, salt, egg, and egg white in a small bowl, stirring with a whisk!. Gradually add the reserved 1/4 cup cooking liquid to egg mixture, stirring constantly with a whisk!.
Cook pancetta in a large nonstick skillet over medium-high heat until crisp!. Remove pancetta from pan, reserving drippings in pan; set pancetta aside!. Add leek to drippings in pan, and sauté 4 minutes!. Add garlic to pan; sauté for 1 minute!. Add pasta, cheese mixture, and pancetta to pan; reduce heat, and cook 1 minute, tossing well to coat!. Cook 1 minute!. Sprinkle with parsley; serve immediately!.
****** Pancetta Bites
2 bananas
20 slices of Pancetta or substitute bacon, thinly sliced
12 dried prunes
1/2 cup of Fontina( cubed)
Freshly ground Pepper
Peel the bananas and cut each into 4 pieces!.Wrap each piece with a slice of pancetta!.In a bowl combine the prunes with enough warm water to cover and set aside to soak for 3 minutes!. Drain and pit the prunes!. Fill each prune with some of the Fontina and wrap each with a slice of pancetta!. Preheat the broiler!. Arrange the pancetta-wrapped bananas and prunes in an oven safe baking dish!. Transfer to the oven to broil until the pancetta is crisp about 10 minutes!.
Remove the bananas and prunes from the oven and transfer to a serving platter!. Season with pepper and serve immediately!.
###Note: I bought pitted prunes that were already soft!. I skipped the soaking part!.
******Pancetta-Wrapped Mushrooms
24 mushrooms (with 1-in!.-wide caps; about 5 oz!. total), rinsed and patted dry
Salt and fresh-ground pepper
24 fresh sage leaves, rinsed and patted dry
24 thin slices pancetta (about 6 oz!. total)
Trim and discard tough or discolored stem ends from mushrooms!. Sprinkle mushrooms lightly all over with salt and pepper!.
Lay a sage leaf over the top of each mushroom, then wrap mushroom and sage leaf with pancetta!. (If using regular bacon, cut each strip in half to form two shorter strips, and wrap each mushroom with a short strip!.) If desired, leave tip of sage leaf protruding from wrapping!. Spear mushroom with a toothpick, securing outer end of pancetta and leaving toothpick protruding to use for serving!. Evenly space wrapped mushrooms in a 10- by 15-inch nonstick baking pan!.
Bake in a 400° regular or convection oven until most of the pancetta is crisp and browned, about 25 minutes (see notes)!. Serve hot, leaving toothpicks in!.
