How do you cook wild quail?!


Question: How do you cook wild quail!?
My BF is a big hunter, and quail season just started!. Him and my son went out and got 7 last night, im gonna wait for about 30 and have a feast!. I just don't want to make them his way with only salt and pepper!. I know if I soak them in milk for 3-5 hours the gamey taste goes away but im not sure how to cook them!. Ive thought about breading them but im sure every oness had quail that way!. Any unique and/or original ideas!?!?!?Www@FoodAQ@Com

Southern Stuffed Quail --

"A truly Southern recipe!. A good side dish to go with this is sweet potatoes!. You can also grill over coals!."



INGREDIENTS
1/4 cup ground pork
2 tablespoons chopped fresh parsley
2 tablespoons finely chopped carrots
2 tablespoons finely chopped celery
1 clove chopped fresh garlic
2 1/2 tablespoons fresh bread crumbs
ground black pepper to taste
8 quail, cleaned and split lengthwise
1 tablespoon bacon drippings



DIRECTIONS
Preheat the oven broiler!.
In a bowl, mix the pork, parsley, carrots, celery, garlic, bread crumbs, and pepper!.
Arrange the quail in a baking dish!. Separate the skin from the breast of each quail, and stuff with equal amounts of the stuffing mixture!. Brush with bacon drippings!.
Broil the quail 7 minutes on each side in the preheated oven, or to a minimum internal temperature of 180 degrees F (85 degrees C)!.

Jalapeno Quail Appetizers --

This recipe has become our favorite way to serve the birds!. The bacon keeps the meat from drying out, and the jalapeno lends a little zip!.



INGREDIENTS
2 large jalapeno peppers, halved lengthwise and seeded*
1 pound boneless quail breasts
12 bacon strips
1 (16 ounce) bottle Italian salad dressing



DIRECTIONS
Cut each jalapeno half into three long strips!. Place a strip widthwise in the center of each quail breast; roll up from a short side!. Wrap each with a bacon strip and secure with toothpicks!. Place in a large resealable plastic bag!. Add salad dressing; seal bag and turn to coat!. Refrigerate for 8 hours or overnight!.
Drain and discard marinade!. Grill appetizers, covered, over indirect medium heat for 16-20 minutes or until quail juices run clear and bacon is crisp, turning occasionally!.

Quail With Rice --



INGREDIENTS
4 bacon strips, halved
8 quail, dressed
1 cup shredded carrots
1/2 cup sliced green onions
1/2 cup minced fresh parsley
2 1/2 cups chicken broth
1 cup uncooked long grain rice
1/2 teaspoon salt
1/4 teaspoon lemon-pepper seasoning



DIRECTIONS
In a large skillet over medium heat, cook bacon until partially done!. Remove bacon; drain, reserving 2 tablespoons drippings!. Brown quail in drippings!. Remove and keep warm!. Saute carrots, onions and parsley in drippings until tender!. Add broth, rice, salt and lemon pepper; bring to a boil!. Place quail over rice; place one bacon strip on each!. Reduce heat; cover and simmer for 25-30 minutes or until the rice is tender and quail is cooked!. Www@FoodAQ@Com

QUAIL OR DOVES WITH WILD RICE

8 quail or doves
1/2 c!. butter
2 c!. sliced mushrooms (fresh if available)
1/2 c!. chopped green onions
1 c!. dry white wine
2 tbsp!. lemon juice
Salt and pepper to taste
Cooked wild rice

Brown birds in butter, remove and set aside!. Saute mushrooms and onions in butter!. Place birds, mushrooms and onions in shallow pan and cover with foil!. Bake at 350 degrees for 1 hour!. The last 15 minutes remove foil!. Combine wine, lemon juice, salt and pepper and baste birds often!. Serve hot with wild rice!.

The first recipe sure sounded good!. I tried to cook a grouse in the crock pot once, and it turned into a meat brick - THREE DAYS in the crock pot and it was completely inedible!. I asked somebody else about this, and they said the answer was to pan fry it!. Bread it and fry it in a skillet - the mushrooms and onions and rice sound wonderful, but cook the bird until it is just done - no more!.

You can make it like making turkey!. You can stuff it!. Me I would take oranges and cinnamon and place on inside!. Then make a marinade of brown sugar, water and honey!. Bast though out cooking!. You can get a rotisserie style effect by taking a metal coat hanger and putting through the middle of the bird!. Then make hooks at the end and let hang from top oven rack with a drip pan under!.Www@FoodAQ@Com

Here are 3 great recipes! I would use the Baked Quail with Mushrooms because I love mushrooms, but they are all equally good!

Baked Quail with Mushrooms
1/3 c All-purpose flour
1 ts Salt
1/2 ts Pepper
6 Quail; cleaned
2 tb Butter
1/2 lb Fresh mushrooms; sliced
1/2 c Butter
1/4 c Plus 1 tbsp all-purpose flour
2 c Chicken broth
1/2 c Sherry
Hot cooked rice

Combine 1/3 cup flour, salt, and pepper!. Dredge quail in flour mixture, and set aside!.
Melt 2 tablespoons butter in a large skillet; add mushrooms, and sauté 4 minutes!. Remove mushrooms from skillet; set aside!. Melt 1/2 cup butter in skillet; brown quail on both sides!. Remove quail to a 1-1/2 quart casserole!. Add 1/4 cup plus 1 tablespoon flour to drippings in skillet; cook 1 minute, stirring constantly!. Gradually add chicken broth and sherry; cook over medium heat, stirring constantly, until gravy is thickened and bubbly!. Stir in mushrooms!. Pour mushroom gravy over quail!. Cover and bake at 350 degrees F for 1 hour!.

Serve over rice!. Yield: 6 servings!.

Baked Quail with Rice


~ 10 quail, split
~ 1 1/2 cups long grain rice (uncooked)
~ 1 clove garlic, minced
~ 1 can cream of mushroom soup
~ 4 cups water
~ 1 pkg!. dried onion soup mix


Place rice in bottom of a greased baking pan and place quail on top!.

Mix the garlic, soup and water together!. Pour over the quail!.

Sprinkle the onion soup mix over the top of the soup!.

Cover pan with aluminum foil and bake 2 hours at 350 degrees!.

Uncover last 10 minutes to brown!.

Serve and Enjoy!

Fried Quail with Onion Gravy

30 Quail; cleaned
Salt and pepper
All-purpose flour
8 sl Bacon
2 c Peanut oil
1/4 c All-purpose flour
1 c ;Water
2/3 c Onion; minced
Dash of garlic salt

Sprinkle quail with salt and pepper to taste; dredge in flour, and set aside!.
Fry bacon in a large skillet!. Remove bacon, reserve for other uses!. Add peanut oil to drippings in skillet; heat over medium heat!. Add quail; cook 10 to 12 minutes on each side or until done!. Remove quail from pan; drain on paper towels!. Reserve 1/4 cup drippings in pan!.

Add flour to drippings, stirring until smooth!. Cook 1 minute, stirring constantly!. Gradually add water, stirring well!. Add onion and cook over medium heat, stirring constantly, until thickened and bubbly!. Stir in 1/2 teaspoon salt, 1/8 teaspoon pepper, and garlic salt!.
