Scallops with White Wine Sauce II

INGREDIENTS
1/2 cup chicken broth
1/4 cup white wine
1/2 lemon, juiced
1 tablespoon minced shallot (I use 1 1/2 tablespoon)
1 clove garlic, minced (I use 2 cloves)
1/4 cup butter
1 pound sea scallops
1 tablespoon olive oil
salt and pepper to taste
DIRECTIONS
Preheat the oven broiler!.
In a skillet over medium heat, mix the chicken broth, wine, lemon juice, shallot, and garlic!. Cook and stir until most of the liquid has been reduced!. Stir in the butter until melted!.
Brush the scallops with olive oil, and season with salt and pepper!.
Arrange on a baking sheet!.
Broil the scallops in the preheated oven about 2 minutes on each side, or until opaque!. Serve with the wine sauce!.
* The oven is easy- but I think it's best to sautee scallops- they have more flavor!. I saute the scallops separate from the sauce with 1TB olive oil and a pat of butter!. I use the large sea scallops- make sure to rinse and pat dry with a paper towel and season well!. Then place on med-high skillet and do not touch for 3 minutes- check to see if you have a nice med to dark brown edge on the scallops, then turn and cook for 2-3 mins more!.

- 3/4 pound scallops
- 1 clove garlic - chopped fine
- 1/2 large onion - chopped fine
- 1 tablespoon olive oil
- 1/4 cup chicken or vegetable broth
- 1/4 cup lemon juice or 1/2 fresh squeezed lemon
- 1/4 cup fresh parsley - chopped, more for garnish or 2 tablespoons dried parsley
whole wheat or regular pasta
fresh parmesan cheese - grated, optional!.
Coat a large skillet with 1 tablespoon of melted butter!.
Heat to medium high heat!.
Add scallops and sear on each side 3-5 minutes or until opaque!. Don't overcook!.
Remove from heat, keep warm!.
Add 1 tablespoon olive oil to pan, cook onion and garlic until tender!.
Stir in chicken broth and lemon juice!.
Simmer 5 minutes!.
Stir in fresh or dried parsley, dash of salt and ground black pepper!.
Cook pasta according to package directions!.
To Serve:
Divide pasta between two large bowls!.
Spoon scallops over pasta, top with sauce!.
Sprinkle with parmesan cheese and fresh parsley if desired!.

Scampie Style - Very dry large scallops!. Dust lightly in flour, garlic powder, salt & pepper and brown each side in very hot pan with a butter/olive oil blend!. Pour in some white wine and a squeeze of lemon juice!. Serve on rice or noodles!.

toothpicks
Wrap scallops with bacon!. Skewer with toothpicks!.
Sprinkle brown sugar on top!. Broil 2-3 minutes, flip and repeat!.
