What broth is, is water with vegetables and spices that have been simmered for a very long time so that all the flavours from the vegetables and spices have transferred to the water!. You can add the same spices and vegetables to water but won't taste as good because they weren't allowed to release their flavours into the water for as long!.
Broth (or stock) made from vegetables, spices and bones will add an abumdance of flavour to your soup!. The fat and remaining meat on the bones will give the broth very good flavour!.
You can buy pre-made stock at the grocery store in a tetra pack container, which are half-decent!. You can use the OXO soup bases but they do not taste as good and you run the risk of making your soup too salty!.
You can make a vegetable broth (stock) by simmering vegetables and spices (tied up on cheese cloth) in water for 6-8 hours!. Then strain out the vegetables and reserve the stock!. Sautee some fresh cut-up vegetables until tender, add the stock and more spices if needed!. Tada, soup!.Www@FoodAQ@Com
