Tuna Sashimi

12 oz!. ahi tuna steak (sushi quality)
1 cup low-sodium soy sauce
1 cup chopped chives
1/2 tsp!. chopped garlic
1/3 cup wasabi
1 tbs!. rice vinegar
2 bunches watercress
2 cups pickled ginger

Cut tuna in thin slices, divide, and arrange on four large plates!.

Cover with plastic wrap and keep chilled until ready to assemble!.

Combine chives and garlic with soy sauce!. Reserve!. Mix wasabi and
rice vinegar to a paste consistency!. Reserve!. Wash watercress, trim
stems and pat dry with paper towels!.

Assembly: Place watercress on top of tuna!. Set pickled ginger and wasabi on each side of the watercress!. Pour sauce around tuna and serve!.

SASHIMI

1 (6 oz!.) can tuna
1 tsp!. soy sauce (more, if desired)
2 tbsp!. chopped onion
Crackers

Drain tuna!. Mix with soy sauce and chopped onion; spread on rice crackers (or other cracker of your choice) as an appetizer!.
Makes 5 to 6 servings!.

OR

SASHIMI (SLICES OF RAW FISH)

2 squid, raw
14 oz!. raw tuna (cut into fillets)
Horseradish
Soy sauce
1 dried sheet of seaweed

1!. Slice tuna, starting from ends, into 1/2 inch squares in a cutting motion toward you!.
2!. Remove legs and top fin of squid; then remove skin!. Make slits on surface 1/5 inch apart lengthwise, taking care not to cut through!. Affix a sheet of seaweed to the bottom and roll squid, then cut!.

3!. Place tuna and squid on a plate!. Garnish with horseradish!. Dip sashimi (sah-she-me) in soy sauce and eat!
