How long do potatoes need to cook in a beef stew?!
I'm making this recipe:

It says not to add the vegetables until the beef has already cooked for an hour, and then after adding the vegetables, to cook it all for 20 minutes!. I want to add potatoes to the recipe this time!. Do they generally need to cook for longer than the carrots and the squash!? Trying to figure out when to add them in!.Www@FoodAQ@Com

When cooking a stew, the meat cooks the longest, then the potatoes and carrots, because they are hard vegetables -that take the longest to cook!.
The problem with potatoes is that the cooking time depends on how small you cut it up!. If you were to cut it very small it could take twenty minutes to cook but if you cut it too small you may wind up with a mashed potato in the stew pot!.
You could cut your potatoes up and boil them in their own pot, cooking them until they feel about half-cooked!. Watch the time so you know how long you cooked them, then add them to the stew and cook for that length of time!. That may be the safest way to add them to a stew!.
Another idea is to just use small or medium sized whole potatoes and put them in the stew when you cook the meat!. Check the potatoes regular, testing them with a fork!. Remove them if they are done before the meat is done!. Then add them back into the stew to warm up after the vegetables have been cooked in the stew!.Www@FoodAQ@Com

I always add my carrots and potatoes and onions at the same time, after the beef has cooked until tender!. It should only take 20-25 minutes to cook the vegetables!. You mentioned squash, in a liquid base, your squash will cook too much and turn to mush if you put them in at the same time with the other vegetables!. I'd add them about the last 10 minutes of cook time!. You should also try to cut all your potatoes and carrots approximately the same size, that way they all cook to the same doneness!.Www@FoodAQ@Com
