Yes!!!! First off I would go to a store and purchase the fish fresh, they normally have the fish scaled already!. Then depending on how you want it cut, fillet or steak, then purchase either some sort of seasoning mix or corn meal!. This is what makes the skin crispy!.Www@FoodAQ@Com

Yes, of course, but ask your fishmonger to do it!. I did it once and never again - those scales go everywhere!. I think I was still finding them in corners of my kitchen 6 months later!.

You should descale fish regardless of how you want the skin, its not nice to eat at all!. If you want crisp skin once the fish is prepared fry it skin side down and do not move it until you can see the edges browning underneath!. that will give you crisp skin!.Www@FoodAQ@Com

There's no reason you should be leaving the scales on a fish!. This will only make it difficult to handle, season, and cut!. Always descale a fish!. Www@FoodAQ@Com
