Answers:
ok!.!. heres how I do it
I take 2 cups of raw basmati!.!. rice in cool water till the water comes clear then drain well, set aside
if you want garlic or onion flavor, i saute up 1/2 onion and 2 cloves garlic in a little oil till onion is clear, then add the rice and stir around for 2 minutes till the rice comes clear and shiny coated!.!.
then I add enough "hot" water till it comes just 1 thumbs knuckle height above the rice (I dont measure it in cups)!.!.!. I add a generous sprinkle of salt, then bring the thing to a boil!.!.!. when it starts boiling, I cover it, turn down to low!.!. and allow it to do its thing untouched for 15minutes!.!. come back, fluff with fork and its fantastic!.!.!.!.
I sometimes add a dash of allspice, tumeric, cardomom, pepper to the oil while sauteing the onion, give a spicy flavor!.!.
or I add more garlic (to make garlic rice) and when the water starts to boil I add 1/2 cup of frozen green peas!.!.!.
these are my basic rice recipes!.!.
but I have others under my belt also!.!.!.Www@FoodAQ@Com
