Ingredients
1 lb lean boneless pork (cut in 1" CUBES)
1 tsp salt
2 tbsp minced minced thyme and scallions (green seasoning)
1/2 tsp!. black pepper
2 tsp!. minced garlic
2 tsp!. minced shadow beni or cilantro
2 tsp!. minced pimento
2 tbsp!. vegetable oil
1 tbsp!. garam masala (curry powder)
1/4 cup water
1tsp!. minced hot pepper
1tbsp!. minced hot chili pepper
1 tbsp!. ground cumin (geera)
Directions
1!. Season pork with salt, green seasoning, black pepper, garlic, shadow
beni and pimento; allow to marinate for at least four hours or overnight
2!. Heat oil; mix garam massala with 1/4 cup water to form a paste and add
to hot oil and cook for about 3 minutes until thick
3!. Add pork and stir until coated with massala
4!. Lower heat, cover and allow to simmer in its own juices for about 20-25
minutes or until almost cooked
5!. Add minced hot pepper and cround cumin; stir thoroughly and allow to
cook for an additional 5-10 minutes until tender
N!.B!. It may be necessary to add about 1/2 cup water during cooking to
avoid burning!.
Beef or chicken could be substituted for pork!.
