1!. Remove any fat and gristle from the roast and cut into strips 1/2 inch thick by 2 inches long!. Season with 1/2 teaspoon of both salt and pepper!.
2!. In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side!. Add the onions and cook slowly for 3 to 5 minutes, then push to the side with the beef strips!.
3!. Stir the flour into the juices on the empty side of the pan!. Pour in beef broth and bring to a boil, stirring constantly!. Lower the heat and stir in mustard!. Cover and simmer for 1 hour or until the meat is tender!.

This is how I make it:

Brown pieces of chunk beef in a bit of canola oil!. About 2lbs!. for a family!.

In a sauce pan, gently sautee 1 chopped onion and a package of sliced mushrooms in a bit of oil, add in the beef and 1 can beef stock!. Add in 1 clove garlic, chopped and salt and pepper to taste!.
***I also add a couple glogs of A1 Steak Sauce to the simmering mixture!.
Bring to a boil then reduce heat to low and simmer!. Let cook for about 40 mins-1 hour to tenderize the meat!. The broth will reduce!.

(I usually have a lid on for the first half of cooking then take it off for the second half!.)

After the meat has cooked long enough,
Mix 1/2 cup heavy cream with 1/2 tsp!. corn starch and let sit/dissolve!. No more than 1/2 tsp!. corn starch!.

Slowly stir in the heavy cream and let cook an additional few minutes!.

Before serving (over buttered egg noodles or garlic mashed potatoes) stir in about 1/2 cup sour cream to the sauce!.Www@FoodAQ@Com
