Any good perch recipes?!


Question: Any good perch recipes!?
I have some frozen perch and some Italian bread crumbs!. Any quick, super tasty ideas!?Www@FoodAQ@Com


Answers:
BEST WALLEYE OR PERCH

Any white fish
Dill weed
Garlic salt
White pepper
Sweet basil
Lemon juice
Parmesan cheese
Italian style bread crumbs
Melted butter

Place fish skin side down in glass baking dish!. Sprinkle generously with all above ingredients to taste!. Bake in 425 to 450 degree oven for 10-20 minutes until bubbly and flaky; can be broiled!.

OR

FLAMING PERCH

1 (3 to 4 lb!.) perch
2 tsp!. salt
3 tbsp!. melted butter
2 sm!. bunches fennel greens
1/3 c!. brandy, heated

Wash perch and dry thoroughly!. Rub with salt inside and out!. Dip the fish in the melted butter and grill over an open fire for about 10 minutes basting often with melted butter!. The fish is done when if flakes easily!.
Place the fish in a shallow baking dish and cover it with the fennel greens which have been washed and thoroughly dried!. Pour brandy over the greens and set aflame!. 4 servings!.

OR

PARMESAN PERCH

2 lb!. perch fillets
2 c!. saltine crackers, finely crushed
Parmesan cheese
2 eggs
1 tbsp!. pepper
Cooking oil

Beat eggs and pepper until well mixed!. Dip completely dry fillets into egg and then in finely crushed cracker crumbs!. Heat 1/2 inch cooking oil, then add perch, turning when golden brown!. Salt lightly!.

OR

OVEN BAKED PERCH

1 lb!. perch fillets
1 c!. milk
Salt & pepper to taste
3/4 c!. bread crumbs (fine)
1/4 c!. melted butter

Preheat oven to 350 degrees!. Place perch in greased baking pan, skin side down!. (I use an 8"x11" glass pan!.) Pour milk over fish making sure to moisten it all!. Sprinkle bread crumbs on, salt and pepper to taste!. Drizzle butter on fish, then bake for 20 minutes!. Yield: about 8 to 9 fillets!.
