Spagetti Meatballs failure?!


Question: Spagetti Meatballs failure!?
The meat tasted like sausages, not unpleasant but not what usuially tastes like!. Used merlot red wine for the reduction which added nothing to the taste!.

Ingredients
600g/1lb 5oz spaghetti
250g/8?oz minced beef
1 egg
100g/3?oz "00" or strong flour
600g/1lb 5oz tinned, chopped tomatoes
1 medium onion, finely sliced
1 red chilli, finely sliced
small glass of red wine
90ml/3?fl oz olive oil
handful of flatleaf parsley, finely chopped
100g/3?oz pecorino cheese
salt to taste



Method
1!. In a large bowl, mix the minced beef, egg and parsley together!. Season to taste!.
2!. Now take a teaspoon of mixture and, in your hand, roll it into a ball!. Dust the ball in flour and put to one side!. Repeat with the rest of the mixture!.
3!. In a frying pan, gently sauté the onions and chilli in the olive oil until soft!.
4!. Add the meatballs and gently fry until golden brown!.
5!. Now add the red wine and simmer for approximately two minutes!. Once the wine has evaporated, pour in the chopped tomatoes!. Season to taste and cook for a further four minutes!.
6!. In the meantime, cook the pasta in boiling, salted water until al dente!. Drain and add to the sauce!.
7!. Mix well and serve with freshly grated pecorino!.

I use regular ground beef!. Usually either 85% lean or 90-95% lean!. If you go too lean, the meat starts to fall apart!. Something gave it that sausage taste and it was probably the meat! If you cooked the same type of meat in another dish, does it taste that way too!? If so, it's the meat!. If not, it could be your seasonings!. I usually add bread crumbs, egg, garlic powder, onions, cheese, etc!. to my meat balls and they turn out the same each time- very tasty!. I think maybe you're trying too hard!

p!.s!. I bake mine in the oven on a cookie tray!. That way they don't get rubbery from the skillet!. I dont' like meat cooked in a skillet!Www@FoodAQ@Com

You're not giving enough info to go off of but I can tell you how I make my grandmothers meatballs which are better than any you'll ever find in a restaurant (my family is mostly italian)

I use 3lbs of ground beef, and 1lb of rosemary pork sausage mixed in very well with 2 eggs, 1c!. of bread crumbs, a little italian seasoning not going into detail of what all i put in mine, so just use store bought), and mix well like you would meatloaf!. Make 2" balls, put them on a baking pan and bake for 1 hour on 300, then put under the broiler for 5 minutes, turn and broil the other side!. Serve with a little of your sauce spread on top of them!.Www@FoodAQ@Com

It was either a mix up in the meat (which I've done before, LOL)

Could of been the sauce or even the SPICES you added!. Too much seasoning will kill it too!.

This is how I make meatballs:

1 pound hamburger (mince)
3/4 cup Italian Breadcrumbs
1 egg

The meatballs should be cooked separately from the sauce!. Use good mince, an egg and a bit of flour to bind, and deep fry them but not overdone or they will be rubbery!. Do the sauce separately and add spaghetti, but save half for meatballs!. Add meatballs and then pour sauce on top!.Www@FoodAQ@Com

not enough info to know where you went wrong but my grandmother always uses veal, Ground chuck, egg, italian bread crumbs and lots of garlic!. she cooks the meat balls first in olive oil!. they are really tasty i make them the same way!.Www@FoodAQ@Com

Oh Honey,Your not ready!. Go buy Ragu & pre made meatballs!. Let the meatballs cook very slowly in the sauce for half the day absorbing the flavors, enjoy that then work on that kind of taste & experiment!. You do not need expensive meat, just lean ground beef!. Stay away from wine for reduction!. Listen I'm half italian & still perfecting my homemade balls ! lol, you'll get it!.Www@FoodAQ@Com
