Making fudge...calls for canned milk, don't have any..?!

Canned milk - whether it is evaporated or condensed - has had at least 40% of its water removed so it is thicker than regular or skim milk - so in answer to your question, using skim milk or even regular milk will fail!. Wait until you can get to the store to buy the type of canned milk called for in the recipe!.

Don't try it with skim or regular milk, the taste and texture will be off!. You need the evaporated milk!. I have been making fudge with marshmallow creme for years and one time tried using regular milk and it didn't turn out very well!.Www@FoodAQ@Com
you can try substituting with half and half, or heavy cream, since evaporated milk has 50 to 60 percent of the water removed!.Www@FoodAQ@Com
