Do you think it's the yeast?!


Question: Do you think it's the yeast!?
I've made lots of loaves of bread in the past but recently I've made bread with 100% whole wheat whole grain flour that will not rise!. I made sure not to kill the yeast and even proofed it first!. It foams and after the initial kneading by hand it will rise but not much!.

For the one loaf recipe with 3 cups of flour I used one package of active dry yeast!. The bread came out flat and hard!. Any ideas as to why this happened!?

Are you using only whole wheat flour!? That's very heavy and most recipes call for a combination of whole wheat and white flours!. It might take lots more yeast to get only whole wheat to rise!. I'd suggest you check other recipes since it sounds like your yeast itself is fine!.Www@FoodAQ@Com

I think I remember hearing/reading that one needs to add gluten flour to whole wheat flour to get the rise going!.

I freeze my yeast jar, so I can be sure it is fresh!.

Hey, if nothing else, get some fresh yeast and see if that helps!.
