What is a good recipe for elk hamburger and elk round steak?!

INGREDIENTS
1 1/2 pounds ground elk meat
2 large yellow onions, diced
2 (10 ounce) cans tomato sauce
1 (14!.5 ounce) can Italian-style stewed tomatoes
1 (15 ounce) can kidney beans, drained
1 (4 ounce) can diced green chiles (optional)
1 1/2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
1/2 cup brown sugar
DIRECTIONS
In a large deep skillet over medium heat, cook the ground elk with the onion until evenly browned!. Drain off excess grease!.
Pour the tomato sauce, stewed tomatoes, kidney beans and green chilies into the skillet with the meat, and stir to blend!. Season with chili powder, cumin, salt, pepper, oregano and brown sugar!. Cover, and simmer over low heat for at least one hour!.

1-2 onions

2-3 tsp!. beef bouillon
Flour elk pieces, season with a little salt and pepper!. Using Dutch oven brown in 1 to 2 tablespoons hot oil!. When well seared add 6 cups of water, beef bouillon and bay leaf, cook/simmer for 1 hour or until tender!. Cut up carrots, potatoes and onions into bite size chunks, add to meat!. Cook/simmer for 1/2 hour or until tender!. Thicken stew with 1/2 cup flour mixed with 1 cup cold water!. Add to stew and cook until thickened!. Add more water if extra gravy is desired!. Remove bay leaf before serving!. Serve with hot buttermilk biscuits!. Serves 6!.

Salt, Pepper and Chili Powder to Taste

Brown elk burger and onion!. Add rest of ingredients and simmer on the stovetop for 30 minutes!.

Cut elk round steak into strips!. Mix next nine ingredients in slow cooker!. Add elk meat!. Cook on low for 8 to 10 hr!.!. Combine the cold water and cornstarch add to crockpot, cook until thickened, about 15 more minutes!. Serve over noodles or rice!.

Both your ideas would work!. The only thing is that the elk is so lean is could dry out easily but I know a lot of people who make elk stew and also deer stew!.
We like elk steak for a breakfast steak!. Lightly dredge the steak (should be cut into small pieces-about 3-4 inches) in flour seasoned with salt and pepper, and then fry up!. Contradictory to what I recently saw on Iron Chef game Should be cooked thru specially if it is wild!.Www@FoodAQ@Com
