Shrimp Scampi!.!.!.it's so easy!
1 1/2 pounds large shrimp (about 16 to 24)
1/3 cup clarified butter
4 tablespoons minced garlic
6 green onions, thinly sliced
1/4 cup dry white wine
2 tablespoons lemon juice, fresh if possible
2 tablespoons chopped fresh parsley
Salt and pepper, to taste
Rinse shrimp and set aside!. Heat butter in large skillet over medium heat!. Cook garlic 1 or 2 minutes or until softened but not browned!. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side!. Do not overcook!. Add chopped parsley and salt and pepper before serving!. I make this at least twice a month - it's super easy and super delicious!
Grilled Marinated Shrimp
1 cup olive oil
1/4 cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
skewers
In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper!. Reserve a small amount for basting later!. Pour remaining marinade into a large resealable plastic bag with shrimp!. Seal, and marinate in the refrigerator for 2 hours (I've left the shrimp in the marinade overnight and it didn't hurt it)!.
Preheat grill for medium-low heat!. Thread shrimp onto skewers, piercing once near the tail and once near the head!. Discard marinade!.
Lightly oil grill grate!. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade!.

12 shrimp

1/2 cup cream
3 tablespoon Parmesan cheese, grated
3 cups fettuccine, blanched
Clean, devein and remove shells from the shrimp!.
Sauté the shrimp together in clarified butter!. Add the cream and reduce by half!. Add grated Parmesan cheese to thicken!.
Toss the blanched fettuccine in the sauce, making sure it gets covered!. Arrange the shellfish on top of the pasta, garnish with freshly grated Parmesan cheese and serveWww@FoodAQ@Com

I use it in quiches, newburg, scampi, gumbo, appetizers, anything!. My hubby's favorite though is newburg!. This recipe is similar to the one that my mom passed down to me!. We also add imitation crab, and scallops in addition to the shrimp!.
