This is how my mom and I do it!.

chicken breast between two pieces of wax paper or saran wrap!. Whack it thin with a rolling pin, bottle of wine whatever

put a piece of ham about the same size as the chicken breast
same with swiss cheese
roll it up and fix with tooth picks!.

Do as many as you need!.
I put it in a roasting an with mushroom soup, chopped onion, little garlic powder and s&p at 350 for about 30 minutes lid off then add another piece of cheese to the top, back in the oven for another 10 minutes or so!.
Really good!. I also do this one

Same deal with the chicken breast pound it out
put genoa salami in the middle hot or mild
grilled red peppers
Same method with the mushroom soup, but put tomato sauce instead!.

You can also butterfly the chicken breast and put barbecue sauce all over and stuff it with peppers, bacon and onions and then shredded chedder cheese on it!. (This ones my personal fave) Same deal, in the oven 350 for 30 minutes then throw the cheese on it and let it melt for another 10-15 minutes!.

1 cup bread crumbs
? cup butter or margarine

Spread each chicken piece with ? tsp mustard!. Place half slice of cheese and ham on each piece of chicken!. Fold breasts in half!. Dip in flour, then egg, then crumbs!. Place on rack and refrigerate for at least 30 minutes to allow crumbs to set!.

In large skillet, heat butter over medium heat!. Fry chicken about 5 minute on each side!. Transfer to baking dish and bake for about 15-20 minutes at 350F!. Makes 4 servings!.

These are really good as well, enjoy!

Artichoke Filled Chicken Rolls

1 – 9 oz package frozen artichoke hearts, thawed
1 cup freshly grated parmesan cheese
? cup mayonnaise (or ranch dressing)
2 garlic cloves, minced
3 tbs fresh basil, minced
6 boneless chicken breast, pounded flat
salt
pepper
6 thin slices ham
3 tbs olive oil
3 tbs butter or margarine

Place first 5 ingredients in food processor and puree until fairly smooth!. Reserve!.

Season chicken with salt and pepper!. Top each breast with a slice of ham and spread a thin layer of artichoke mixture on top of the ham!. Roll up and secure lengthwise with toothpick or tie crosswise in several places with un-waxed dental floss!.

Preheat oven to 350 F!. Heat olive oil and butter in a skillet over medium-high heat!. Add chicken rolls and cook, turning frequently until brown!. Transfer to a shallow baking dish and bake for 25 minutes!. Remove string and slice at an angle!. Serves 6 (10-12 as an appetizer)!.

Cream Cheese and Chicken Roll Ups

4 boneless chicken breasts, pounded flat
1 container flavored Philly Cream cheese (Chive & Onion, Smoked Salmon, Garlic & Onion, etc)
8 strips of regular or maple flavored bacon

Preheat Oven to 350 F

Spread each chicken breast with cream cheese putting more towards the center of
the chicken breast!. Roll up chicken from the thickest end to the thinnest keeping as much cream cheese inside as possible!. Wrap one piece of bacon around chicken covering the open ends!. Then wrap another piece going the other direction crossing the previous piece to cover all openings!. Secure with toothpicks or unwaxed dental floss!.

Put in casserole dish or square pan!. Bake 15 minutes, turn over and bake 15 more minutes!. Drain off most of the grease and broil on each side for a few more minutes until bacon is brown and crisp!. Remove toothpicks or dental floss and serve as is or cut slices and spread more cream cheese on them to melt!.

Serving Suggestions:
I serve with garlic flavored noodles and green beans!. Any flavored cream cheese will work and if you use the smoked salmon one, the maple bacon tastes best or you can drizzle the regular bacon with maple syrup!.Www@FoodAQ@Com
