2-3 chicken breasts, sliced thinly
1 tsp ground ginger
1 tbsp oil
4 tbsp fresh, finely chopped basil
4 tbsp green curry paste
1 can coconut milk
2 c any frozen veggies you'd like
2 tbsp minced garlic
2 tbsp sugar

Saute the chicken with the garlic in the oil until outsides of the chicken slices are white but the chicken is still pink in the middle!. Add the rest of the ingredients!. Mix well!. Simmer until vegetables are cooked!.

CurrySimple red curry sauce is made in Thailand with fresh, natural ingredients (coconut milk, red chilli, galangal, lemongrass, shallot, garlic, etc)!. This recipe is very easy and can be prepared by anyone that knows how to cook chicken and stir fry vegetables!.

Red Chicken Panang Curry - Serves 2
ready in ten minutes



16 oz boneless chicken breast chopped into bite size pieces
1/2 chopped red pepper
1/2 chopped green pepper
1 tablespoon smooth peanut butter
10-15 fresh basil leaves
1 cup CurrySimple Gourmet Red Curry sauce

1!. Heat pan to medium-high heat
2!. When pan is hot - begin to cook chicken breast - 3 minutes
3!. Add chopped red peppers, green peppers and fresh basil leaves - stir-fry for 2 minutes
4!. Add 1 cup of bottled Red Curry sauce (found in the Oriental section of your market) in the veggie stir-fry pan!.
5!. Add 1 tablespoon of smooth peanut butter and stir (will infuse into the sauce when heated)

Easy Chicken Curry with Rice

1- 3lbs chicken
2 tablespoon curry powder
onion, thyme, garlic, pepper, black pepper!.
salt to taste
lemon or lime juice

Clean, skin,and cut chicken in small pieces,then wash with lime or lemon juice
Drain, season with curry, onion, thyme, garlic, peppers, salt and let marinate for awhile
In a skillet pour about 3 tablespoon of oil!. Let oil heat but not too hot
Add chicken and let cook until done!.
Serve over white rice
