Dragon-size Fortune Cookies
David Herzog

? c!. all purpose flour
1 Tbs!. corn starch
? c!. sugar
? tsp!. salt
? c!. vegetable oil
2 large egg whites
1 ? tsp!. water
? tsp!. vanilla extract
? tsp!. almond extract
3 fortunes on ?” X 3” paper

In a bowl, combine flour, cornstarch, sugar, and salt!. Blend in remaining ingredients and stir until smooth!. Bake one cookie at a time on a 12” Dutch oven pre-heated lid, using the Dutch oven upside-down!. Evenly spread 1/3 cup batter in a circle onto the center of the oiled lid into a 10” circle!. Bake 13 to 15 minutes at 300° until the edges are a light golden brown!.
Place a fortune in the center of the cookie and fold in half using pot holders to protect your hands from the hot cookie!. Grasp the ends of the folded cookie and gently pull the ends together!. You may start the bend by bending the cookie over the corner of a table, edge of a Dutch oven, or measuring cup!. Hold the ends together for a minute for the cookie to hold its shape!. Repeat with remaining batter!.
The temperature is critical when baking fortune cookies!. If it rises over 300°, the edges will be over browned and crack!.
