Ok, well I live in Hawaii and have three chefs in my family!. I think you are going to need to ask your friend what he/she thinks what "Hawaiian" chicken is!. Nobody in Hawaii thinks that Hawaiian chicken has pineapple chunks in it!. The most popular chicken preparation that Hawaii is known for is called "Huli Huli Chicken" (Huli Huli means turn and turn)!.

Rotisserie Huli Huli Chicken

3-pound chicken fryer
1/3 cup dark soy sauce
1/4 cup lime juice
1/4 cup honey
3 tablespoons brown sugar
3 cloves garlic, minced
2 tablespoons ketchup
1/2 teaspoon Tabasco
salt and pepper to taste
1 teaspoon sesame oil
Preparation:
Combine all ingredients except the chicken and mix well!. Brush 1/3 of the mixture over the entire surface of the chicken inside and out!. Let sit for 20 minutes!. It's best if you can get as much as possible under the skin, particularly over the breasts!. Place chicken on rotisserie spit and grill over a medium low heat on grill with a drip pan under the chicken!. After 20 minutes brush of cooking time brush with another 1/3 of the mixture!. Repeat after another 20 minutes!. Continue grilling until done!. Chicken should take about 1 to 1 1/2 hours to cook!.

If you do not have a rotisserie, use this recipe!.

HULI HULI CHICKEN
9-12 pounds chicken wings, thighs, and breasts pieces

Sauce Ingredients:
? cup Frozen pineapple juice concentrate
1/3 cup White wine
? cup Chicken broth
? cup Shoyu/Soy Sauce
? cup Katsup
? Teaspoon powdered ginger or a pinch of fresh ginger
1-2 drops Worcestershire sauce

Wash chicken parts and pat dry with paper towels!. Mix all sauce ingredients in bowl!. Brush over chicken parts!. Grill over barbecue for about 40 minutes!. Turn and baste with sauce until chicken is done!. Serves 10-12 people as a main course!.

If your friend is thinking of "Shoyu Chicken"!.!.!.

SHOYU CHICKEN
3 lb!. fryer chicken
Shoyu Sauce
1 cup shoyu (Asian soy sauce)
1/2 cup sugar
2 Tablespoon honey
1/2 cup chicken broth
1 teaspoon hoisin sauce (can be found in the Asian food section in your local market)
1 whole star anise (mashed)
Garnish: Chinese parsley and green onions
Steam chicken for 30 minutes!. In a frying pan combine ingredients for sauce and let simmer for 15 minutes!. Place chicken in sauce and simmer chicken for 5 minutes on each side till chicken is well coated with sauce!. Chop chicken and arrange on platter!. Garnish with Chinese parsley and green onions!. Makes about 6 servings!.

And last but not least, many people are actually thinking Teriyaki!.!.!.

TERIYAKI BEEF OR CHICKEN
3 to 4 pounds of beef or chicken
Teriyaki Sauce:
2/3 cup shoyu (Asian soy sauce)
1/2 cup sugar
2 Tablespoons sherry or white wine
3 clove garlic, minced
1 inch piece ginger, crushed
3 stalks green onion chopped fine
1 teaspoon Chinese 5 spice (optional)

Grilled Teri-Beef and Teri-Chicken Sticks: A great way to make teriyaki beef or chicken when grilling is to slice the meat into thin strips before marinating!. Then put on bamboo skewers and grill for 2-3 minutes per side!. The meat comes out tender tasty and is easy to eat right off the stick!.

Hope that helped!.
