Classic Mexican Flan Recipe
1/2 Cup Sugar

1 Cup Milk

3 Large Egg yolks

1 Teaspoon Vanilla extract

14 Ounce Sweetened condensed milk

3 Large Eggs

1/2 Teaspoon Almond extract

In a small saucepan melt sugar over moderate heat, stirring frequently, until sugar is a dark, caramel-colored liquid!. Remove from heat and pour into a 4 cup metal ring mold or 8 individual molds!. Quickly turn flan ring to coat bottom and sides with the caramel!. Let cool so caramel hardens!.

Heat oven to 325F!.

Put the condensed milk, milk, eggs, egg yolks and flavorings into an electric blender!. Cover and blend to mix well!. Pour mixture into mold; put flan ring in a larger pan filled with water to depth of 1/2"!. Bake for 1 hour!. Remove from oven and remove mold from water!.

Note: It is customary to make flan in a special pan or flan ring over a bain marie!. Place the custard pan into the larger baking dish!. Now fill the outer baking dish with enough water to come up about an inch around the outside of the custard pan!.

Allow the flan to come to room temperature!. Run a sharp knife around the edge to loosen!. Place a serving plate that's slightly larger than the flan mold on top of the mold and flip upside down!. Gently remove the the mold and cut the flan into wedges to serve!.

Note: The custard should just pop right on to the plate with the luscious carmel topping dripping down the edges!.

A flan ring is a round pan with a removable base, for cooking a flan or quiche!.

Mexican Flan
Flan De Leche
3 cups milk
1 teaspoon vanilla extract
1 cup sugar divided
5 large eggs
Sprinkle ? cup sugar in a heavy skillet!. Cook over medium heat, stirring constantly, until sugar melts and turns a light golden brown!. Immediately pour into a 6-cup bundt pan; let mixture cool!. Combine remaining ? cup sugar, eggs, milk, and vanilla in container of an electric blender; process until sugar dissolves!. Pour into bundt pan, and place pan in a large dutch oven!. Add water to dutch oven to depth of 2 inches!. Bake at 350 for 45 to 50 minutes or until a knife inserted in center comes out clean!. Carefully remove bundt pan from dutch oven; cool on a wire rack!. Cover and chill 8 hours!. Invert onto serving dish, letting melted sugar mixture drizzle over the top!. Yield: 8 servings!. Almost all flan is good, but texture is important!. It should be relatively solid and grainy when cut !.!.!. not creamy like pudding!.

4 eggs
1/2 cup sugar
8 ounces cream cheese
1 14-ounce can sweetened condensed milk
1 large can evaporated milk
1 tablespoon pure Mexican vanilla extract

Preparation
Melt 1-1/2 cups sugar over low heat!. Pour into a shallow mold pan with center hole and tilt to cover bottom thoroughly!.

Process the remaining ingredients in a food processor until well blended!. Strain and pour into prepared pan!. Bake at 350 degrees in hot water bath for 45 to 55 minutes!. Cool!.

Chill for 24 hours!. This is a firm but creamy flan, almost like cheesecake in consistency!. It’s exceptional served with fresh tropical fruits or berries!.Www@FoodAQ@Com

1 (16 ounce) can chili beans, drained
3 cups crushed tortilla chips
2 cups sour cream
1 (2 ounce) can sliced black olives, drained
1/2 cup chopped green onion
1/2 cup chopped fresh tomato
2 cups shredded Cheddar cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
In a large skillet over medium-high heat, cook ground beef until no longer pink!. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed!. Stir in beans, and heat through!.
Spray a 9x13 baking dish with cooking spray!. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips!. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream!. Top with Cheddar cheese!.
