PLAIN SCONES (makes about 12)
A greased baking sheet
8oz (225g) self raising flour
1!.5 oz (40g) butter at room temperature
1!.5 tablespoons of caster sugar
a small pinch of salt
5 fl oz (150ml) of milk
a little extra flour for dusting

Preheat your oven to Gas mark 7 (425F/220C)!. Sift the flour into a large mixing bowl and rub the butter into it rapidly using the tips of your fingers!. Next stir in the sugar and salt, then take a knife and use it to mix in the milk little by little!. Flour your hands and knead the mixture into a soft dough - you can add a little more milk if it seems a bit dry at this stage!. When the dough has come together, place it on a floured surface and roll it out to a thickness of around half an inch!. Take a 1!.5 inch or 2 inch pastry cutter and cut out your scones!. Try not to twist the cutter as you are doing this, or they may come out a bit of an odd shape :o) xxxxx carry on doing this until you have cut them all out, then shape the trimmings together and you may get another one out of them! Place the scones on the greased baking sheet, dust each one with a little extra flour and bake in the top half of the oven for 15 minutes!. Eat them when they are still slightly warm with some strawberry jam and whipped cream - ENJOY! xxxxxx

Scone Recipe:

2 cups (280 grams) all-purpose flour

1/4 cup (50 grams) granulated white sugar

2 teaspoons (10 grams) baking powder

1/4 teaspoon salt

1/3 cup (76 grams) cold unsalted butter, cut into pieces

1 large egg, lightly beaten

1 teaspoon pure vanilla extract

1/2 cup (120 ml) whipping cream or milk

Glaze:

Cream

Preheat oven to 375 degrees F (190 degrees C) and place the rack in the middle of the oven!. Line a cookie sheet with parchment paper!.

In a large bowl, whisk together the flour, sugar, baking powder and salt!. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives!. The mixture should look like coarse crumbs!. In a small measuring cup combine the whipping cream, beaten egg and vanilla!. Add this mixture to the flour mixture!. Stir just until combined!. Do not over mix!.

Knead dough gently on a lightly floured surface!. Roll or pat the dough into a circle that is about 7 inches (18 cm) round!. Then, using a 2 1/2 inch (6!.5 cm) round cookie cutter, cut the dough into rounds!. Place the rounds on the prepared cookie sheet, spacing a few inches apart!. Brush the tops of the scones with a little cream!. This helps to brown the tops of the scones during baking!.

Bake for about 15 - 18 minutes or until nicely browned and a toothpick inserted into the center of a scone comes out clean!. Remove from oven and transfer to a wire rack to cool!. Serve with Devon cream or softly whipped cream and your favorite jam!.

These scones freeze very well!.

Makes about 10 - 2 1/2 inch (6!.5 cm) round scones!.

Mix some flour (250g) with one spoonful of baking soda!.
With your fingers mix in the flour 80g of butter until you have a grainy mixture!.
Add in some milk until the mixture stops being sticky
Cut the dough into round shapes, with an empty glass!.

SCONES

3 cups self-rising flour, sifted
1/4 cup oatmeal flour
1/2 cup butter, melted
1/3 cup sugar
milk, buttermilk, or cream
2 eggs
1 scant cup raisins or currants
1 teaspoon baking powder

Preheat oven to 400°F degrees!.
Pulse the oatmeal in a food processor until it has the consistency of fine flour!.

Cut butter into the flour using your fingers until mixture resembles coarse crumbs!. Stir in oatmeal, sugar, baking powder, beaten eggs and currants or raisins!.

Add enough milk to form a sticky dough, turn out onto a lightly floured board and knead approximately 10 turns!. Do not over-knead, as this will make the scones tough!.

Flatten to a circular shape, about 1 1/2" in thickness and cut wedge shaped pieces!. Arrange pieces 1 inch apart in a circle on a lightly greased pan!. Brush tops with cream or beaten egg white and bake about 15 minutes or until golden!.

NOTE: If using buttermilk, reduce baking powder to 3/4 tsp and add 1/4 tsp soda instead!.

These can be made in the food processor up until the point where you add the liquids!. Add the dry ingredients to the oatmeal in the first step and pulse to combine, then add the butter and process for a few seconds, add beaten eggs with milk and knead briefly by hand if required!. Do not knead in the food processor or scones may be tough!.


RAISIN SCONES

2 c!. all purpose flour
2 tsp!. baking powder
1/2 tsp!. baking soda
1/2 tsp!. ground nutmeg
1/2 tsp!. salt
8 tbsp!. (1 stick) unsalted butter, chilled and cut up
1 c!. raisins
2 tbsp!. granulated sugar
Yolk of 1 lg!. egg
3/4 c!. buttermilk or plain yogurt
1 large egg white
more sugar for sprinkling

Heat oven to 375 degrees!. Put flour, baking powder, baking soda, nutmeg and salt into a large bowl; stir to mix well!. Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine granules!. Add raisins and sugar; toss to distribute evenly!.
Add egg yolk to buttermilk in a measuring cup and whisk with a fork to blend!. Pour over the flour mixture and stir with a fork until a soft dough forms!.

Turn out dough onto a lightly floured surface and give 10 to 12 kneads!. Cut dough in half!.

Knead each half half briefly into a ball; turn smooth side up and pat into a 6 inch circle!. Cut into 6 wedges, but do not separate wedges!.

In a small bowl, beat the egg white with a fork until just broken up!. Brush the top of each scone with egg white and sprinkle lightly with sugar!.

With a pancake turner, carefully transfer the two cut circles into an ungreased cookie sheet!. If necessary, reshape circles so that the 6 wedges in each are touching!. (This will keep the raisins from burning!.)

Bake 18 to 22 minutes, until medium brown!. Cool on a wire rack; after 5 minutes pull the wedges apart and cover loosely with a dish towel!.

Note: Egg white and sugar can be added before freezing the unbaked scones!.


COARSE WHOLE WHEAT RAISIN SCONES:

Replace 1 cup all purpose flour with 1 cup whole wheat flour, and add 1/2 cup bran meal to the flour mixture!. Omit nutmeg!.


VANILLA SCONES WITH JAM AND CREAM

250 g (1 2/3 cup) self raising flour
30 g butter
Pinch of salt
2 tablespoons sugar, plus extra for sprinkling
125 ml (1/2 cup) milk, plus extra, for brushing
Seeds of one Vanilla bean
1/2 cup strawberry conserve
125 ml (1/2)cup cream, lightly whipped

Preheat oven to 200 degrees celcius!. Line bkaing tray with baking paper!.
Place flour, butter, salt and sugar in a food processor and process until mixture resembles bread crumbs!. Add milk and vanilla bean seeds, and pulse until mixture forms a soft dough!.

Remove dough and knead together quickly!. Roll out dough to a thickness of 3 cm!. Using a 5 cm round pastry cutter, cut dough into rounds!.

Place on prepared tray!. Brush tops with a little extra milk and sprinkle with extra sugar!.

Bake in oven for 12 minutes, or until scones have risen and tops are golden!. Serve warm or cold, with jam and cream!.

Makes - 12 Preperation time - 20 minutes Cooking time - 12 mintues
