My husband bought some sword fish the other night and would like to have it for dinner tonight anyone have a good recipe for sword fish

Here are some great recipies!. Remember that you can overcooked!. It also tastes great pan seared in olive oil and herbs over pasta!.

Below are a bunch of dishes, ranging from protein and veggies to creamy pasta!. ENJOY!!

Swordfish with Citrus PestoRecipe courtesy Giada De Laurentiis
Ingredients
Citrus pesto:
1 bunch fresh basil, stemmed (about 3 cups)
1/2 cup pine nuts, toasted
1 clove garlic
1 lemon, zested and juiced
1 orange, zested and juiced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
1 cup grated Parmesan
Swordfish:
4 (6-ounce) swordfish steaks
Extra-virgin olive oil
Salt and freshly ground black pepper
Directions
Blend the basil, pine nuts, garlic, zests, juices, salt, and pepper in a food processor until the mixture is finely chopped!. With the machine running, gradually add the olive oil until the mixture is smooth and creamy!. Transfer to a bowl and stir in the Parmesan!.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill!. Brush both sides of the swordfish fillets with olive oil and season with salt and pepper!. Grill the swordfish about 3 to 4 minutes on each side for a 1-inch thick fillet!.

Transfer the grilled swordfish to serving plates, top with the citrus pesto, and serve!.

Grilled Swordfish with Rosemary

INGREDIENTS
1/2 cup white wine
5 cloves garlic, minced
2 teaspoons chopped fresh rosemary
4 (4 ounce) swordfish steaks
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
4 slices lemon, for garnish
DIRECTIONS
Stir wine, garlic, and 1 teaspoon rosemary together in an 8 inch square baking dish!. Sprinkle fish with salt and pepper!. Place in the baking dish, turning to coat!. Cover, and refrigerate for at least 1 hour!.
In a small bowl, stir together the lemon juice, olive oil, and remaining rosemary!. Set aside!.
Preheat grill for medium heat!.
Transfer fish to a paper towel-lined dish, and discard marinade!. Lightly oil grill grate to prevent sticking!. Grill fish 10 minutes, turning once, or until fish can be easily flaked with a fork!. Remove fish to a serving plate!. Spoon lemon sauce over the fish, and top each fillet with a slice of lemon for garnish!.

Ingredients
For the Lemon Aioli:
2/3 cup mayonnaise
1 lemon, zested
2 tablespoons fresh lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
For the Swordfish Panini:
1 1/2 tablespoons olive oil
4 (6-ounce) pieces swordfish, about 1-inch thick
Salt and freshly ground black pepper
1 tablespoon herbes de Provence
2 cloves garlic, minced
1 loaf focaccia bread
2 ounces (about 2 cups) fresh arugula greens
Directions
For the Lemon Aioli:

Mix together all the ingredients in a small bowl!. Set aside!.

For the Swordfish Panini:
Warm the olive oil in a large, heavy skillet over medium-high heat!. While the pan heats, season the fish with salt and pepper!. Rub the herbs de Provence and minced garlic all over the fish!. Cook the fish in the skillet until just cooked through and golden, about 2 to 3 minutes per side, depending on the thickness of the fish!.

Cut the bread into 4 sandwiches that will accommodate the size of the fish fillet!. Cut the bread in half to make a top and bottom for the sandwich!. Spread the Lemon Aioli on both halves of the sandwich!. Top the bottom half with a handful (about 1/2 cup) of arugula greens!. Top the arugula greens with the cooked swordfish, and top the sandwich with the remaining bread!.

Creamy Swordfish on Noodles

4 cups uncooked egg noodles
1 pound swordfish steaks, cut into 1/2-inch cubes
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 cup heavy whipping cream
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
1 (16 ounce) package frozen California blend vegetables, thawed
DIRECTIONS
Cook noodles according to package directions!. Meanwhile, sprinkle swordfish with 1/2 teaspoon salt and 1/4 teaspoon pepper!. In a large skillet, saute swordfish in oil for 5-6 minutes or until opaque!. Using a slotted spoon, transfer to a bowl; keep warm!.
In a small bowl, combine flour and cream until smooth; add to the skillet!. Stir in the cheeses!. Bring to a boil; cook and stir for 2 minutes or until thickened!. Stir in the fish, vegetables and remaining salt and pepper!. Cook for 5 minutes or until heated through!. Drain noodles; top with swordfish mixture!.

E-Z Marinated Swordfish
2 tablespoons lime juice
2 tablespoons white wine vinegar
1 teaspoon salt
? teaspoon freshly ground black pepper
? teaspoon ground ginger
? teaspoon dried basil
? teaspoon dried thyme
? teaspoon dried parsley
1 teaspoon hot pepper sauce
pinch ground cayenne pepper
3 tablespoons olive oil
2 Swordfish steaks
Combine all ingredients, except for Swordfish steaks, in medium bowl!. Place Swordfish steaks in bowl with marinade, cover, marinate up t 3 hours, turning frequently!.

Prepare outdoor grill!. Lightly oil grate!.

Place Swordfish onto grill!. Cook 5 - 6 minutes each side!. Can also be cooked in same manner under the broiler!.

Grilled Marinated Swordfish

In a glass baking dish, combine first 8 ingredients, mix just to blend!. Place swordfish into marinade, refrigerate 1 hour, turning frequently!.

Swordfish is best in my opinion pan seared with very little spice added!. It is also good baked in lemon butter reduction with just a hint of dill!. It really depends on your own personal taste!. Here in Florida we have spice mixture available called everglades seasoning, a light sprinkle before pan searing makes a great fish dish!.Www@FoodAQ@Com
