Question: What are some good additions to the standard Banana Bread recipe!?

1/2 cup shortening
1 cup sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 medium ripe bananas, mashed
1 cup fresh blueberries
Directions:
In a large mixing bowl, cream the shortening and sugar until light and fluffy!. Beat in eggs and vanilla!. Combine the flour, baking soda and salt; gradually add creamed mixture, beating just until combined!. Stir in bananas!. Fold in blueberries!.
Pour into three greased 5-3/4-in!. x 3-in!. x 2-in!. loaf pans!. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean!. Cool for 10 minutes before removing from pans to wire racks!. Yield: 3 mini loaves!.

Banana Split Bread
2/3 cup shortening
1 1/4 cups sugar
4 eggs
3 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed ripe bananas
2 (8 ounce) cans crushed pineapple, drained
2 cups semisweet chocolate chips
1 (10 ounce) jar maraschino cherries, drained and chopped
1 cup chopped walnuts

In a mixing bowl, cream shortening and sugar!. Add eggs, one at a time, beating well after each addition!. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana and pineapple!. Fold in the chocolate chips, cherries and walnuts!. Pour into two greased 9-in!. x 5-in!. x 3-in!. loaf pans!. Bake at 350 degrees F for 60-65 minutes or until a toothpick comes out clean!. Cool for 10 minutes before removing from pans to wire racks!.

Note: Four 5-3/4-in!. x 3-in!. x 2-in!. loaf pans may be used; bake for 50-55 minutes!. Www@FoodAQ@Com
