Ingredients:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2 to 3 tablespoons olive oil
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese
Preparation:
Whisk together the egg and milk!. Dip the chicken breasts in milk and egg mixture and then in bread crumbs!. Heat olive oil in a large skillet over medium-high heat!. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side!. Set chicken in a baking dish!.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast!. Pour 1 jar of your favorite spaghetti sauce over all!. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly!. Serve with spaghetti, garlic bread and a nice green salad!.

I will give you my simplified recipe:
Ingredients
1 clove garlic, minced
1 stick unsalted butter (1/2 cup or 1/4 pound), melted
1 cup dried bread crumbs
1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
2 Tbsp chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
A large pinch of Italian seasoning (herb mix)
1/8 teaspoon ground black pepper
2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches

Method
1 Preheat oven to 450°F!.

2 In a bowl, combine the minced garlic with the melted butter!. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper!. Dip chicken pieces into garlic butter, then into crumb mixture to coat!.

3 Place coated chicken pieces on to a 9x13 baking dish!. Try to leave a little room between each piece!. Drizzle with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear!. Note that the chicken will get much more browned on the bottom side than on the top!.

First off, buy some skinless chicken breasts and put them under some saran wrap!. Pound them with a meat tenderizer until they are evenly flat!. Then, throw them into a zip lock bag with salt, black pepper, italian seasonings, fresh garlic, olive oil and balsamic vinegar!. Marinate them in the frig for about 2 hrs!. Bring them out to get to room temperature and make your dipping baths!. Get a shallow pan filled with flour, S&P, another pan with eggs and a dash of milk, and one last pan with some Italian flavored Panko breadcrumbs!. Put your chicken into the flour bath, fully coating each side and shaking off the excess, then dredge them into the egg bath (again, both sides), letting the excess drip off, drop them into the breadcrumbs, pressing ever so gently on both sides to let the crumbs adhere to the chicken!. Get a large skillet and coat it with Olive Oil, once this pan gets hot, (medium high heat) lay your chicken breasts evenly around the pan, remembering to leave some heating space in between, lower your heat to medium and cook about 6-8 minutes on each side!. Take the chicken out of the skillet, then smother them with your favorite Tomato Sauce or Marinara (same thing, great taste whatever you call it) top it with some freshly sliced Boca Mozzarella and Parmesan Cheese, broil it until the cheese is all bubbly brown!. Serve on top of your favorite pasta, more Marinara sauce and enjoy!Www@FoodAQ@Com

to make it healthier, don't fry the chicken!. grill it or bake it!.

I don't coat my chicken in milk and egg and bread crumbs!. I use flour!.
also, save yourself some time pounding those babies out!. get the thin sliced chicken breast avaiable at walmart - purdue brand

Use linguini or angel hair pasta instead of spaghetti!.

I also use HUNTS 4 cheese spaghetti sauce!. and provolone cheese on top of mine!.
