Answers:
It's perfectly normal, it's called oxidation and happens when certain foods come into contact with air!.

Usually, chicken liver pate is topped with clarified butter which creates a seal to keep the air out!. it's like how a layer of oil is poured over the top of pesto - it seals it and stops the air getting in and changing colour!.

chicken liver pate wasn't that great to begin with!. but as far as safe to eat goes it would depend when you opened it and how long it was out!. If milk has another weeks expiration date but you left it on the counter over night it probably is not going to be that good!.Www@FoodAQ@Com

The surface turned grey due to oxidization, most likely!. If it smells fine, it's okay to eat!.Www@FoodAQ@Com

Exposure to the air made it turn colors!. Was it well covered!?
It should be fine to eat!.Www@FoodAQ@Com
