How do you make a great tasting vegetable soup ?!
my first attempt using vegetable broth, spices, and vegetables came out very bland!. Basically, I used peppers onions kale spices and let it boil for about 1/2 hour!. How do i make it taste better!? Thanks for your help!.Www@FoodAQ@Com

Just boiling vegetables isn't enough: you need to sautee the aromatics first and then add the liquids!.
Aromatics: celery, onion and garlic, also known as a mirepoix

i just made a huge pot last nite!.
what i used is ( you have to adjust amouts to how much soup you want!.)
1/2 filled my large pot with water!.!.!.prolly at least 8 cups ( i never measure i just do)
sliced up 6 stalks of celery
sliced up 1/4 head of cabbage
sliced up 4 large carrots
1 can corn
1 can green beans
cooked and diced up 1 full chicken breast (boneless skinless)
dashed in some italian seasoning!.!.!.
chicken or tomato base boulion granuals!.!.!.add to your liking!.!.!.!.( i think all in all i use about 1/4cup since i use a large pot)
let it simmer for half hour!.!.!.!.
toss in handfull or two of some instant rice ( you dont want to much as it will absorb all the water)
let it cook for another 1/2 hour
( if it seems to thick you can always add a bit more water but not ot much to take away the flavors youve already created!.)
serve toss in a few flavored croutons for added flavor and a bit of crunch!.!.!.!.
salt n pepper to your liking!.!.!.
sprinkle with a little romono or parmasian cheese (optional)
( if an when i have bagged spinache i also toss half the bag in too )Www@FoodAQ@Com

I make a vegetable soup with 2 cans V8,2 large cans of diced tomatoes,8 cans of whole white potatoes which I drain the juice before adding to the pot,1 large onion finely diced, chopped green chili's 3 cans or 1 large can,1 bag of frozen corn,sweet peas, and green beans,8 stalks celery sliced!. Add 1 stick of butter and start on burner on low!. Take 3 pounds of ground round and brown it or make mini meatballs and drain!. Add that to the pot and cook on low for a couple of hours!. I used chicken legs to make broth!. I put my chicken legs or chicken thighs in boiling water!. Let it cook maybe 1 hour!. Take chicken legs out and use that water to make broth!. Take all that white stuff that comes on top off! Let chicken cool and break up in small pieces to add to soup!. Throw bones away! If don't want to use chicken then just add vegetable broth or bouillon cube to water!. I use bouillion cubes, alilltle oil and 2 tablespoons of butter to boiling water! Cut up onion, garlic, potatoes, carrots, peppers, basil,parsley, celery, salt, oregano and any spices you want!Sometimes I cut up a tomato!. Let it boil! Then I add my pasta(ditalini or orzo) or rice!. The butter and oil make it taste better! Mine was YUMMY! When put in your dish, I like american cheese in it!. It melts and it's good!. My husband puts grated cheese on his! it was good!
