Celery, Carrot and Five-Seed Salad
25g mixed seeds (I used sunflower, pumpkin, linseed, hemp and sesame - they came ready-mixed)
2 medium carrots, cut into julienne strips (I have a special peeler that does this but you could use a mandolin or a regular peeler or even chop by hand if you have skill and patience in equal measures)
1 small fennel bulb, finely shredded (add any fronds that look healthy too)
2 large sticks celery, sliced (use the yellow leaves too if you have any)
- It couldn’t be simpler, mix everything together!. You’re done!.
Stir Fry Celery and Carrots
Ingredients: Extra Virgin Olive Oil; Ginger(minced or crushed); Celery(shredded); Carrots(shredded); Dried herbs (optional)
Directions:
1!. In a lightly oiled pan, saute ginger till fragrant
2!. Add in carrots and celery and saute till they start to turn tender!. Remember, do not overcook!.
3!. Add in some dried herbs (basil or oregano) if you wish
4!. Serve immediately

the other day i made spaghetti squash with a bolognese and I put carrotts and celery in it!. even my boyfriend loved it, and he's a tough critic!. he hates squash!.
I used rachael ray's recipe and altered it a bit!.

i used chicken stock, because that's all i ever have!. pretty much left out the cheese, i had like a tablespoon left!. i added celery at the same time as the carrotts, and mushrooms a bit later!. i also am too cheap to buy pancetta, so i used bacon!.

2 lbs ground beef (or ground turkey) (also, I've used canned black beans , either 2 cans if no meat used, or one can with 1 lb meat used in recipe)
(also, occasionally, added corn, diced green pepper, and other veggies)
1/2 teaspoon salt or sea salt (optional)
1/4 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1/8 teaspoon seasoning salt (optional)
1 (2 ounce) package onion soup mix (for 3 or 4 servings)
6 cups boiling water
1 (8 ounce) can tomato sauce (can use spaghetti sauce)
1 tablespoon soy sauce
1 cup celery, sliced
1/4 cup celery leaves
1 cup sliced carrot
1/3 cup dried split peas
1 cup elbow macaroni (I use whole wheat)
grated parmesan cheese
In a large saucepan, brown meat, drain excess fat!.
Add salt, pepper, oregano, basil, seasoned salt, and onion soup mix!.
Stir in boiling water, tomato sauce, and soy sauce!.
Cover and simmer for about 15 minutes!.
Meanwhile, prepare celery, celery leaves, and carrots; Then add to simmering mixture with split peas and continue to cook for 30 minutes!.
Add macaroni and simmer for 30 minutes longer, adding more water if necessary and stirring occasionally!.
Serve sprinkled with Parmesan cheese over individual servings!.
To freeze: place soup in a rigid container and freeze!. To reheat: remove from freezer and thaw!. Place soup in saucepan and heat, stirring, until hot!.
