CRAN-APPLE GLAZE
1 (8-ounce) ca jellied cranberry sauce
? cup apple jelly
? cup light corn syrup
TRADITIONAL TURKEY GRAVY
2 tablespoons turkey drippings (fat and juices)
2 tablespoons all-purpose flour
1 cup liquid (turkey juices, broth or water)
Browning sauce, if desired
Salt and pepper to taste
Thaw turkey if frozen (see Tips for a Terrific Turkey in Tips for how to

Old-Fashioned Stuffing, see recipe!.) Fill wishbone area with stuffing
first!. Fasten neck skin to back with skewer!. Fold wings under back of
turkey!. Fill body cavity lightly with stuffing!. Fill body cavity lightly!.
(Do not pack-stuffing will expand while cooking!.) Tuck drumsticks under
band of skin at tail, or tie or skewer drumsticks to tail!.

Place turkey, breast side up, on rack in shallow roasting pan!. Brush with
melted butter or margarine!. Insert meat thermometer so tip is in thickest
part of inside thigh muscle and does not touch bone!. Do not add water!. Do

Roast uncovered in 325∫ oven!. Follow Timetable (in Tips) for approximate
total roasting time!. Place a tent of aluminum foil loosely over turkey
when it begins to turn golden!. When two-thirds done, cut band of skin or
string holding drumsticks!.

Turkey is done when thermometer reads 180∫ and drumsticks move easily when
lifted or twisted!. (If not using a meat thermometer, test for doneness
about 30 minutes before Timetable indicates; roast until juices of turkey
are no longer pink when you cut into the center of the thigh!.) Prepare
Cran-Apple Glaze (below) while turkey is roasting!. Remove turkey from oven
and let stand 20 minutes for easiest carving!. Brush glaze on turkey about
20 minutes before turkey is done!. Brush again with glaze before carving!.
If turkey is stuffed, place tip of thermometer in center of stuffing; it
should read 165∫ after standing time!.

CRAN-APPLE GLAZE
Mix all ingredients in 1-quart saucepan!. Cook over medium heat about 5
minutes, stirring occasionally, until melted!.

TRADITIONAL TURKEY GRAVY
Pour drippings from roasting pan into bowl, leaving brown particles in
pan!. Return 2 tablespoons of the drippings to pan!. (Measure accurately so
gravy is not greasy!.) Stir in flour!. Cook over low heat, stirring
constantly, until smooth and bubbly; remove from heat!. Stir in liquid!.

Heat to boiling over high heat, stirring constantly!. Boil and stir 1
minute!. Stir in a few drops browning sauce!. Stir in salt and pepper!. Makes
about 1 cup gravy!.
