Why did my cupcakes sink in the middle?!
I just made a batch of Buttermilk Cupcakes!.
The flavor is wonderful, the texture is wonderful and they are very moist!.
However, after they came out of the oven, they totally sank in the middle!. (And, they were done enough!.)
Does anyone know why this happened and how I could correct it for next time I bake them!?

Answers:
Too high of a heat and/or too much leavening!. It rises with the heat but too much rise makes steam which shrinks when they come out of the oven!. I usually cook muffins at 375!. The Buttermilk will make the batter acidic which makes the leavening work a bit more!.
If you wait about 5 minutes before baking, the acid reaction will finish and they won't rise quite as much!.Www@FoodAQ@Com

i bet you fiddled with the heat while they were baking- that's the number one no-no in cake baking!. To me it sounds like you turned it down after about 3/4 of the cooking of your cupcakes!. Next time choose a slightly lower temperature and if they start to burn put aluminum foil over them but don't turn the heat down until they have stopped rising completely!. Www@FoodAQ@Com

or the way that you cooled them could have been the problem, you could have put down the trey of cupcakes to hard that the middle sank in!. you maybe need to be a little more gentle on setting the baked goods down and also you could keep it in the over for a minute longer!.Www@FoodAQ@Com

Could be a couple of things!.
Not quite cooked or you opened the oven and that caused your cakes to sink!. also did you warm the oven before putting your cakes in!. Did you use the right Temperature and the right timing,

It sounds like they were not baked long enough!. To prevent it from happening again, don't open the oven door too much and leave them in for just a few minutes longer!.Www@FoodAQ@Com
A bit more flour and do the Toothpick test before removing from oven!.

before putting them in th eoven, give the pan a couple of hard taps on the counter, this will release any air bubbles!.!.!.!.good luck and happy baking!Www@FoodAQ@Com
