chili is actually really easy to just sort of make up as you go along, by just putting meat, beans, tomatoes, and veggies in a pot and simmering them, but I like this recipe from patti labelle's cookbook!. It's easy to make it less spicy by leaving out the cayenne and the jalapenos!.

2 T veg oil (or olive oil)
2 lbs ground turkey (not breast only or super low fat)
2 med onions, chopped
1 small green bell pepper, seeded and chopped (or red)
1 jalapeno or 1/2 habenera (wear gloves to avoid a Hot Pepper Incident)
2 cloves garlic (or 3 or 4)
3 T chili powder
2 t gr cumin
1 t dried oregano
1/2 t cayenne (or more)
2 cups water
1 14 1/2 oz can of diced tomatoes with juice
15 oz can of crushed tomatoes
1 6 oz can of tomato paste
salt and pepper

Heat oil and brown the turkey!. Add onions, green pepper, jalapeno, and garlic, and brown!. Add all spices and stir combine!. Add all tomatoes and the beer!. Bring to simmer, simmer for an hour, uncovered!.

Mine is very simple!. I basically use what I have on hand!. The basic recipe is this!. Brown 2- 3 lbs gound turkey or chicken, seasoning to taste with salt, pepper, and garlic powder!. Optioal - I have also added browned kielbasa "coins, " ground sausage, venison, leftover roast - whatever I may have in hand!. Then I add 1 large can of tomato sauce (and then 1 can of water), 1 can of beans (more if you really like them - again, use whatever you like!. I have used chili beans, kidney beans, pinto beans, black beans, etc!.)!. A can of corn &/or diced tomatoes with or without peppers can be added now too!. I don't drain or rinse the beans, as the liquid helps to thicken the chili!. Season with chili powder (usually 3 tablespoons or so),!. more salt, pepper, & garlic powder, cumin, a little cinnamon, and a touch of cayenne pepper!. Taste your chilli so you can adjust your seasonings!. If it tastes a little too acidic, a little sugar can be added to help even out the flavor!.Www@FoodAQ@Com

Ok, food snobs will thumbs down me here but this is how I made it when my kids were little and they loved it so much they still come home and ask for it!. IN fact my oldest daughter is on her third tour in HOT Iraq and she keeps saying first thing she wants when she returns is our chili!.

I brown up a mix of ground beef and ground sausage, drain, season with salt, pepper, chili powder, garlic powder and onion powder!.
In a big stock pot pour in 2-3 cans of tomato JUICE, add in the seasoned meat, you can heat through and taste and season it with more chili powder or even cayenne, etc!.!. depending on how you like it!. The kids and I hate beans so I never added them, however my husband likes beans and onions and peppers in his so I would usually have a smaller pan and make his much thicker adding in the stuff he liked as well!.

the best thing about this chili soup!? Dipping PB&J sandwiches in!!!!Www@FoodAQ@Com

My family loves this chili!. My husband and son add hot sauce to their servings!. Is is very mild!. My son and I developed this chili over a couple of years, and it never fails to please!. We love ours with homemade, buttery corn bread!.

FIVE BEAN CHILI

2 pounds of ground meat - beef, turkey, chicken, pork, venison, or a mixture of more than one
2 medium onions, chopped
1 bell pepper, chopped
1 can black beans - pour the liquid from the can into the pot, too
1 can dark red kidney beans, drained
1 can light red kidney beans, drained
1 can pink beans (sub!. another bean if you can't find this type), drained
1 can pinto beans, drained
1 can diced tomatoes
salt and pepper, to taste

In large pot, brown the meat (medium to medium-high heat) along with the onions and bell pepper, plus half a teaspoon salt and 1/4 teaspoon black pepper!. When the meat is browned, drain off the fat and add the canned beans and tomatoes!. Stir well, bring it to a boil, then let simmer, covered, on low for 30 minutes!. Taste the chili, and add salt and pepper as needed!. I usually let it simmer an hour total!.

The great thing about this recipe is it is very versatile - you can use less beans, fewer different kinds of beans, and pretty much any ground meat!. Our favorite meats for chili are ground chuck and ground venison, but we like the 1/2 pork and 1/2 ground beef mixture, too!. You can also change the ratio of onions to bell pepper to suit your family!.

This is a cornbread recipe you may want to try with it!. Enjoy!
