What went wrong with this cake? It had totally amazing flavor but was too dense and way too dry?!
Recipe:
6 large egg yolks
1 cup (240 ml) milk
2 teaspoons (8 grams) pure vanilla extract
3 cups (300 grams) sifted cake flour
1 1/2 cups (300 grams) granulated white sugar
1 tablespoon + 1 teaspoon (20 grams) baking powder
3/4 teaspoon (5 grams) salt
12 tablespoons (170 grams) unsalted butter, room temperature and cut into pieces
I baked it at 350 until the toothpick came out with only a few crumbs stuck to it iced it and refrigerated it for about 2 hours before we cut and served!. Dry Dry Dry, the best flavored yellow cake but who could enjoy the flavor when it was so awfully dry!.
Could it have been that I couled it in a glass dish, I actually made two and cooked the other in the Wilton soccer pan, and that cake came out just as dry and actually a little undercooked in the centerWww@FoodAQ@Com

Add a cup or pint of sour cream to any cake recipe and it will come out moist and perfect every time!. Do not omit anything in your recipe just add it!.
also spray your cake pan with non-stick spray and then cpoat it well with sugar!. Instead of having the flour taste you will have a glossy finish and it will slide out perfect every time!.Www@FoodAQ@Com

Beat that butter and sugar until light and fluffy, then add egg yolks one at atime, beating well after each one!. This incorporates air, which adds to the lightness!.
Otherwise, once you add hte flour, *barely* mix it in!. Do not "beat" it in, but rather, stir in by hand w/ a rubber spatula!. THen get into pan and bake!.
Maybe try subbing half sour cream and half milk for all of the milk!.Www@FoodAQ@Com

It may be your baking powder!. Stir a teaspoon of the baking powder into a half cup of lukewarm water- it should fizz!. If it has lost its leavening power, throw it away and buy a new can!. Then try the cake recipe again with the fresh baking powder!.Www@FoodAQ@Com
cakes are funny things!. The glass dish had noting to do with it!. did you cool it before you iced it!?

It appears to have all the right ingredients, but the number of eggs is out of propotion to the flour and liquid!.
Review a standard scratch recipe for a yellow cake, and you will find the appropriate ratio of eggs to flour to shortening/butter!. I think you have too many eggs!. Were you to have used the whites!? Sometimes recipies beat the whites seperately and fold into the cake mixture just before pouring into your baking pans!.
Generally, the sugar is creamed with the shortening, then the eggs, 1/2 the liquid, stirring all the time to ensure thorough blending!. Add flour, salt and baking powder, alternating with the liquid, mix on med speed for at least 2 min, adding liquid as needed to get a smooth bodied cake mixture!. Stir the vanilla in last, mix for another minute, let it rest briefly, and pour into shiny pans!. Avoid glass; i have never found them to work well!.

Is your oven temp right!? A dry cake can be from to much baking powder or baking to long!. And it does seem like a lot of eggs!.
