I do hon - try this one xxxxx (it makes roughly 6lbs so will be great for all your mince pies at Chrimbo! xxxx

1lb cooking apples (peeled, cored & finely chopped)
8 oz (225g) shredded suet
12 oz (350g) raisins
8oz (225g) sultanas
8oz (225g) currants
8oz chopped mixed peel
12oz (350g) soft brown sugar
Grated rind & juice of 2 oranges
Grated rind & juice of 2 lemons
4 teaspoons mixed spice
Half a teaspoon of cinnamon powder
Half a fresh grated nutmeg
6 tablespoons of brandy

Mix all the ingredients (except for the brandy) together in a large bowl!. Cover with a clean cloth & leave for 12 hours!. Then, put the mixture in the oven (loosely covered with foil) at gas mark 1/4 (225F/120C) for three hours!. Allow it to cool, then stir the brandy in & transfer it to clean, dry jars! Thats your mince pies sorted then hon! :o) xxxx Hope this helps xxxxx

2 pounds lean beef
1/2 pound suet
4 pounds tart apples
1/2 pound citrin
1 pund seedless raisins
2 pound seeded raisins
2 teaspoon cnnamon
2 tespoon mace
2 teaspon nutmeg
1/2 teaspoon cloves
1/2 teaspoon allspice
1 tablespoon salt
1 pint fruit juice
rind of 1 orange
juice of 2 oranges
rind of 1 lemon
juice of 2 lemons
1 pint brandy or cider

select an inexpensive piece of meat and cook till it falls apart!. drain and retain broth!. (ground beef can be used) free the suet from the membrane!. chop the meat, suet and apples together!. cut citron in thin slices with knife dipped frequently in hot water!. remove stem, rinse and drain!. cut the seeded raisins in halves!. put meat, and prepared fruits in broth!. Add the sugar, spices, salt, and canned juice!. simmer for 1 hour stiring frequently to prevent scorching!. grate the rind and extract the juice from the lemons and oranges!. Add the brandy and the citrus to the mixture in kettle!. and remove from stove!.

put into hot jars!. partiallly seal!. process in a pressure cookerr at 10 pounds of pressure for 20 mins!.

you can cut the recipe down!.

HONESTLY, it would be cheaper to just buy a can from the store!.

With thanks to Lotte Duncan!. Allow to mature for 2 weeks before using!. This mincemeat can be stored for up to 2 months!.

Ingredients -
110 Gram No-soak, dried apricots, chopped (4 oz)
110 Gram Dried pears, chopped (4 oz)
Juice and grated zest of two oranges
450 Gram Sultanas (1 lb)
450 Gram Raisins (1 lb)
5 Tablespoon Orange marmalade
225 Gram Soft brown sugar (8 oz)
225 Gram Demerara sugar (8 oz)
2 Teaspoon Ground mixed spice
1/2 Teaspoon Freshly grated nutmeg
150 ml Dark rum (5 fl oz)
150 ml Brandy (5 fl oz)
Method
Makes about 1!.8 kg (4lb)

Place all the ingredients in a large bowl and stir until mixed well!.

Cover the bowl and leave to steep for 3 days, stirring occasionally!.

Pot in sterilised jars, cover and store in a cool placeWww@FoodAQ@Com
