It's best done in a double boiler!. If you don't have one, simmer it as slowly as you can, or put some water in a dutch oven, then put a small sauce pot in it such that the water is about halfway up the pot, then put the chocolate in the sauce pot, then heat up the water!. this will help prevent scorching the chocolate or having it separate!.Www@FoodAQ@Com
take a large boiling pan with 3-4 inches of water in it and get it boiling!. Then put your chocolate in a smaller pan and holding the pan (or not if you don't have to) set the pan into the boiling water!. Stir almost constantly until your chocolate is how you want it!.Www@FoodAQ@Com
the best way to melt chocolate is put it in a tupperare, then boil some water in a pan (one that can put the tupperware into) and then put the tupperware floating in the pan of boiling water on the stove!. this stops direct contact melting the chocolate!. i would NOT recommend microwaveWww@FoodAQ@Com
