Mac & Cheese? What kind of Cheese?!


Question: Mac & Cheese!? What kind of Cheese!?
i LOVE Mac&Cheese, but they always put a lil bit of that cheese mix in the pouch per mac pouch!.

so now i'm stuck w/ a bunch of macaroni but i don't want to buy the whole box again, i just want the cheese mix itself!.

so do they sell those cheese pouches by themselves!? or does anyone know wut kind of cheese they use!? i looked on the box and it wouldn't tell me :(Www@FoodAQ@Com


Answers:
You can buy that powdered cheese mix in the bulk-food store!.
But why not use real cheese instead, whatever kinds you like!.
Make a white sauce with oil/butter & flour mixed into a paste!.
Then add a cup of milk, bring to a simmer, add grated cheese(s)!.

Horn and Hardart
? lb!. rigatoni macaroni
2 tablespoons unsalted butter, plus more for greasing pan
1 ? tablespoons all-purpose flour
? teaspoon salt
? teaspoon freshly ground white pepper
1 ? cups milk
? lb!. sharp Cheddar cheese, cut into 1/4-inch cubes
? teaspoon Worcestershire sauce
Cook the macaroni according to package directions!. Drain!.
Preheat the oven to 375 degrees!.
In a 1-quart saucepan, melt the butter over low heat!. With a wire whisk mix in the flour, salt, and pepper!. Cook 1 to 2 minutes or until a smooth mixture forms!. Continue to whisk and gradually add the milk; cook about 5 minutes, until the mixture is thick and smooth!. Remove from heat!.
In a large mixing bowl, combine the cooked macaroni with the sauce, cheese, and Worcestershire sauce!. Pour into a buttered 8x8x2-inch pan and bake for 25 minutes, or until the top browns!.

Quick Macaroni and Cheese
? lb!. macaroni
2 eggs, beaten
? cup 2% low-fat milk
1 tablespoon margarine
8 ounces Cheddar cheese
Boil macaroni or noodles until tender!. Drain well and return to pot!. Add
beaten eggs, milk and margarine!. Toss to mix!. Stir in cheese and cook over
low heat, stirring constantly for 1 to 2 minutes or until mixture is
thickened slightly!. Season with salt and pepper!. Serves 4!.

MACARONI WITH CHEESE SAUCE

1/4 c!. butter
1/4 c!. flour
1/2 tsp!. salt
2 c!. milk
1/2 tsp!. mustard
1-1/2 c!. cut-up process cheddar cheese
3 c!. cooked macaroni

Melt fat and mix in flour and salt!. Add milk slowly, stirring constantly, until sauce starts to boil!. Lower heat and cook 3 minutes, or until thick!. Add mustard and cheese!. Stir over low heat until cheese softens!. Mix in cooked macaroni and heat through!. Serve with broiled tomatoes, asparagus, lettuce and apple crisp!. Makes 6 servings!.

WHITE SAUCE:

2 tbsp!. butter
2 tbsp!. flour
1/2 clove garlic, minced
1 1/2 c!. milk
1/4 tsp!. salt
Dash of pepper
Dash of nutmeg

Melt butter in small saucepan; add garlic and saute over low heat until golden!. Stir in flour to make a smooth paste, cook over low heat until bubbly!. Add milk gradually, stirring constantly!. Add seasonings and cook, stirring until sauce thickens and comes to a boil!.Www@FoodAQ@Com

I make it with cheese whiz, grated cheddar cheese, a bit of mayo, some butter and a bit of milk!.
