PASTA BAKE:
2 tablespoons (30ml) cooking oil
1 chopped onion
1 crushed clove of garlic
1 green pepper, deseeded & chopped
1lb minced beef
1 400g tin of chopped tomatoes
dried mixed herbs (generous shake)
salt & pepper
1oz cheese (25g) grated
15g (half an oz) of butter, cut into small pieces
Spaghetti or pasta
Heat the oil in a large saucepan!. Add the onion, garlic & pepper & fry gently for 5 minutes!. Add the mince & fry until it loses its pinkness!. Then add the chopped tomatoes, herbs and salt/pepper to taste!. Bring to the boil, and then simmer for 20 minutes!. Meanwhile, cook your pasta until it is done & drain it!. Spoon about a third of the meat sauce into an ovenproof casserole dish, & put a layer of pasta over the top of it!. Continue making layers until it's all finished, sprinkle over the butter and grated cheese, and then bake in a medium oven (180C/350F/Gas mark 4) for about 35 minutes or until the cheese is all brown and bubbly! 2 pounds shrimp, peeled and deveined - tails left on
Salt and freshly ground black pepper
Olive oil
1 small onion, sliced thinly
2 tablespoons chopped garlic
1 lemon, juiced
1/2 cup white wine
1/2 cup shrimp stock, recipe follows
2 tablespoons cold butter
2 tablespoons chopped parsley leaves
Lemon slices, for garnish
Rice, as accompaniment
Directions
Season the shrimp thoroughly with salt and pepper!. Heat a large saute pan over medium-high heat!. When the pan is hot, add enough oil to lightly coat the pan!. Add the shrimp and quickly saute until just starting to turn pink, but not cooked through!. Remove from the pan and set aside!. Add the onions and saute just until they begin to soften, about 3 minutes!. Add the garlic and cook another 30 seconds!. Add the lemon juice, white wine, and stock, and reduce by 2/3, about 5 minutes!. Add the shrimp back to the pan and swirl in the butter!. Finish with the parsley and check for seasoning!. Garnish with lemon slices and serve over linguine!.
Serve with (Cheesy) Garlic Bread
1 stick unsalted butter
6 cloves garlic, finely chopped
2 tablespoons chopped fresh Italian parsley
Salt and freshly ground pepper
1 loaf Italian or French bread, sliced 3/4 of the way through into 1/2-inch thick slices
Directions
Preheat oven to 375 degrees F!.
Melt the butter in a small saucepan over medium-low heat!. Add the garlic and let cook for 5 minutes!. Stir in the parsley and season with salt and pepper!. Brush each slice of the bread with the melted garlic butter!. Wrap the loaf of bread in foil and bake in the oven for 10 to 15 minutes, or until heated through!.
Add mozzarella or parmesean cheese for a delicous twist!.

1 10-12″ long piece of New Orleans Style French Bread
4 Tbsp Mayonnaise
3 Tbsp Creole Mustard (Zatarain’s makes a good widely available Creole Mustard!.)
Pickle Slices
3/4 Cup Shredded Lettuce
Tomato Slices (Optional)
Fried Shrimp for Filling (Recipe below)
Slice the bread in half horizontally, I also like to give it a minute or two in the oven to crisp up the crust!.
Spread the Mayonnaise on the inside of the bottom portion of the bread, spread the Creole Mustard on the inside of the Top portion, and a layer of Mayonnaise on top of that!. Spread you lettuce on the bottom portion of bread, then your pickles and Tomatoes (if using)!. Top with the Fried Shrimp, and put the lid on!. Cut the Po’ Boy in half if desired!.
Serve with an ice-cold Beer (like Dixie, Abita Amber, or your personal favorite) and kettle style Potato chips (like Zapp’s)!. Put some hot sauce on the table and enjoy!.

Country-Fried Steak
3/4 cup all-purpose flour
1/4 cup cornmeal
1 teaspoon salt
1 teaspoon pepper
4 beef cube steaks (approximately 1 pound)
2 eggs
2 teaspoons milk
4 tablespoons vegetable oil divided
Gravy
In a pie plate or shall dish, combine flour, cornmeal, salt, and pepper!. In another pie plate or shallow dish, beat eggs and milk!. Coat steaks in flour mixture and then dip into egg mixture!. Dredge in flour mixture again, and let stand 2 minutes!.
In a large heavy frying pan (I use my cast-iron frying pan) over medium-high heat, cook two prepared cube steaks in 2 tbsp!. oil for approximately 5 to 7 minutes on each side or until lightly browned and cooked as desired!. Remove cooked steaks and keep warm!. Repeat with remaining oil and cube steaks!.
Gravy:
1 tablespoon pan drippings
2 tablespoons all-purpose flour
1? cups milk
1 teaspoon beef bouillon granules
1/8 teaspoon pepper
Salt to taste
From the frying pan, drain off all but 1 tablespoon of the pan drippings!. In the frying pan over medium heat, whisk in flour until well blended with the oil, cooking 1 minute!. Gradually whisk in the milk until mixture is smooth; bring to a boil over medium heat!. Boil for 2 minutes, stirring constantly; reduce heat to medium-low!. Add beef bouillon, pepper, and salt to taste; simmer, uncovered, for 4 to 5 minutes, stirring occasionally!. Remove from heat and serve over the steaks!.
Makes 4 servings!.
