This artichoke dip is always a crowd pleaser!.
1 can artichokes hearts not bottoms
1 teaspoon minced garlic from a jar
1/2 cup mayo
1/2 to 1 cup grated swiss cheese
1/2 cup grated parmesan cheese
Cut artichokes into small pieces, either by hand or in a food processor!. If using a food processor, do not over process!. Combine artichokes, mayo, garlic, 1/4 cup of parmesan and a 1/4 cup of swiss!. Place mixture in an oven proof serving dish and cover with remaining parmesan and swiss!. Bake at 425 degrees for about 25 minutes or until cheese is melted and bubbling!. Serve hot with Scoops tortilla chips!. Enjoy!

Cut the bananas in half, lengthwise and grill, skin side down just until warm!. Remove warmed banana from the skin and cut again in half!.
For assembly:
On a piece of aluminum foil, place 1 cookie!. Top evenly with banana slices, marshmallows, chocolate chips, graham cracker crumbs and top with another cookie!. Wrap foil around the sandwich and place on the grill until warmed through and melted!.

Fruit Pizza
1 pkg!. sugar cookie rolled dough
1 8oz!. cream cheese, softened
1 8oz!. sour cream
1 cup confectioners sugar
8-10 strawberries, capped and sliced
handful of blueberries
3 fresh kiwi, peeled, halved, and sliced
? cup pineapple tidbits, drained
Spread cookie dough into a circle on a pizza pan and bake until golden brown; let cool completely!.
Mix cream cheese, sour cream, and confectioners sugar with a mixer until well blended!. Spread on the cooled cookie dough!. Arrange fruit decoratively on top of icing!. Chill for 2+ hours before serving!.

1? C!. mayo
4 oz!. jar diced drained pimientos
1 tsp!. worcestershire
1 tsp!. finely grated onion
1/4 tsp!. red pepper
8 oz!. block of extra sharp cheese, grated
8 oz!. block of sharp cheese, grated
Mix together, spoon into greased 1? qt!. baking dish!. (I have an oval corning dish I've been using) as it makes quite a bit!.
Bake 20 min on 350degrees!.
Serve with cracker, veggies, or baguette slices!.

When roasted, garlic becomes golden and buttery soft, with a delicate nutty flavor!. Here, the roasted cloves are blended into a dip that is enhanced with a medley of fresh herbs!.
4 heads garlic
2 Tbsp!. olive oil
1 fresh rosemary sprig
1 fresh thyme sprig
1? cups sour cream
6 Tbs!. mayonnaise
1? Tbsp!. chopped fresh rosemary
1? Tbsp!. chopped fresh thyme
3 Tbsp!. chopped fresh flat-leaf parsley
3/4 tsp!. Worcestershire sauce
2 tsp!. fresh lemon juice
1? tsp!. kosher salt
Freshly ground pepper, to taste
Potato chips for serving
Preheat an oven to 400°F!.
Cut off the tops of the garlic heads and rub the cut surface with the olive oil!. Put the garlic in a garlic roaster or on a baking sheet!. Arrange the rosemary and thyme sprigs on or around the garlic!. Cover the garlic roaster with the lid or the baking sheet with aluminum foil!. Roast until the garlic cloves are soft and lightly browned, about 1? hours!. Let cool completely!.
Squeeze the pulp from the garlic cloves into the container of an immersion blender or into a deep bowl!. Add the sour cream, mayonnaise, chopped rosemary, thyme and parsley, the Worcestershire sauce, lemon juice, salt and pepper!. Using an immersion blender, blend until well combined!. Cover the dip with plastic wrap and refrigerate for at least 30 minutes!.
Serve the dip with potato chips!. Makes about 3 cups!.

12 large, fresh strawberries, washed
3 oz cream cheese, softened
2 Tbsp!. confectioner's sugar
1 Tbsp!. sour cream
fresh mint leaves for garnish (optional)
Remove stems from strawberries to form a flat base!. Place berries on cutting surface, pointed end facing up!. With a sharp knife, carefully slice each berry in half vertically to within a 1/4 inch of base!. Cut each half into three wedges to form 6 petals!. (Don't slice through the base!.) Pull petals apart slightly!.
In a small bowl, combine cream cheese, powdered sugar and sour cream; beat until light and fluffy!. With a pastry bag (or plastic zipper bag) and star tip or small spoon, fill strawberries with cream cheese mixture!. Garnish with a bit of mint leaf!.

2 cans black beans, drained and rinsed
1 can white (shoepeg) corn, drained
Half cucumber, cut in tiny pieces
2 tomatoes, cubed
1 small purple onion, finely diced
1/3 cup fresh chopped cilantro
1 ? cups Ken’s Steakhouse Italian Dressing
Mix ingredients in large bowl!. Pour in Italian dressing and mix well!. Marinate in refrigerator overnight or at least for a few hours!. Drain off excess dressing!. Serve with Tostitos scoops!.
