Question: Anybody have a side-dish recipe for acorn squash!?

BAKED ACORN SQUASH

Sprinkle nutmeg
1 c!. orange juice
4 tsp!. butter

1!. Wash the acorn squash well and cut in half, but do not pare!.
2!. Remove seeds!.

3!. Place the half squash cut side down in pan!. Pour boiling water to 1/4 inch depth!. Bake at 400 degrees for about 15 minutes, then turn the half so that the cut side is up!.

4!. When tender, remove from pan and scoop out the squash carefully, so that the shell remains intact!. Mash and measure out 1/2 cup and mix with orange juice, nutmeg and butter, then return the mixture to the shell!.

5!. Reheat for a short time if necessary, and serve at once!.


HONEY - GLAZED ACORN SQUASH

2-3 acorn squash
Salt & pepper to taste
1/4 c!. honey
2 tbsp!. butter, softened
1 tbsp!. Worcestershire sauce
1/4 c!. chopped walnuts
1/4 c!. white raisins

Cut acorn squash in half, remove seeds!. Place cut - side down in a shallow pan!. Add 1/2 inch water to pan!. Bake uncovered at 350 degrees for 40-50 minutes, or until almost tender!. Turn cut side up, season with salt and pepper!. Combine other ingredients and spoon into cavities of squash!. Bake uncovered at 350 degrees until filling is heated!. Serves 4-6!.

!.Cheesy Campfire Potatoes
INGREDIENTS (Nutrition)
6 potatoes, sliced
1/4 cup diced onion
2 tablespoons cold margarine
1/4 cup grated Parmesan cheese
3/4 cup shredded mozzarella cheese
3/4 cup shredded Cheddar cheese
salt and ground black pepper to taste

DIRECTIONS
Build a campfire and allow the fire to burn until it has accumulated a bed of coals!. Rake the coals into a flat bed on one side of the fire!.
Cut 2 lengths of heavy duty foil approximately 18 inches square, placing one on top of the other for strength!. Spray top one with non-stick spray!. Spread potatoes on foil leaving plenty of room to fold up later!. Scatter the onion over potatoes; slice the margarine over the potatoes; layer the Parmesan, mozzarella, and Cheddar cheeses over the potatoes; season with salt and pepper!. Bring opposite edges of foil together and seal!.
Place the packet directly onto your campfire and cook until the potatoes are soft, about 35 minutes!.



Winter Squash Puree Recipe
Ingredients:
1 lb orange or yellow squash, peeled and cubed
2 cloves garlic, pressed
2/3 cup chicken stock
4 tablespoons heavy cream
2 teaspoons butter
Preparation:
In a saucepan over medium heat, bring the squash, garlic, and chicken stock to a simmer!. Cover and cook for 10-14 minutes, until the squash is tender!. Using a food processor, puree the garlic-squash mixture with the cream and butter; serve hot!.

Makes 6 servings!.

Me and my hubbi eat the all the time!. This is the way if prepare them!.
Slice the squash into from the stem to the pointed tip!. Remove all seeds with a spoon!. In a baking pan add enough Hot water to fill pan to about 2 inch in dept!. Place the squash upside down with the hull facing up!. Bake at 350 to 375 for about 40 minutes!. Take out of oven and turn one over and see if it has become soft!. If not cook a little longer until soft!. Remove squash and water from pan!. Put squash back in pan right side up with it resting on the hull!. Put about 2 tablespoons of butter and sprinkle with brown sugar!. Put back into oven for about 15 min!. until butter is melted!. Single servings in a bowl to help squash stay in place while eating!. If yu like cinimon you can sprinkle it on too!. Enjoy!. I usually server this with pork chops, chicken, dove or sometimes just squash itself because they are sooo good!. I usually eat one by myself!. This is so easy- just cut squash in half and place cut side up in microwave safe dish!. Add a couple Tbs, of water,cover and cook on high a couple mins!. untill squash is tender!. Spread with butter and sprinkle with brown sugar!. (just a little of each) This is quick and easy and tastes a little like a baked sweet potato!. Www@FoodAQ@Com

Cut the squash in half, scoop out the seeds, put a pat of butter, 1 T of brown sugar and a sprinkle of cinnamon in the cavity!. Bake at 375 until it is fork-tender!.

Serve with any kind of roasted meat or vegetables!.
