When making jam or pickles?!
I read that you need to process after filling the jars!.
I know some people use a canner, others use a large saucepan water bath!.
They say to make sure the jars are covered with an inch of water!.
Can anyone tell me, do the jars HAVE to be right side up, or can you lay them on their sides in the saucepan!? My saucepan simply isn't tall enough to make it possible to cover them in water>

also, do you know, is it absolutely necessary to process pickled beetroot!? I've got a few recipes that dont mention processing at all, whereas others seem to think it is necessary!.

By processing the bottles you are effectively adding an extra precautionary step against food - bourne illnesses!. It creates a vacum within the bottle which removes air, which bacteria needs to grow!.
To be honest, I have never done that and have made hundreds of bottles of preserves!. I simply make sure I sterilize the bottles really well and take great care not to touch them afterwards!.
The jars they refer to in the American states are available in the UK, try lakelands, but you can definately make them without the bottles!. And no, they won't explode!

you need to have them right side up because during the process the heat causes the air to expand and it is released into the water this is what causes the seal if it sits on its side I won't be able to release air Www@FoodAQ@Com
the jars need to be upright and to be on the safe side i would process the beetroot!.Www@FoodAQ@Com
