Excellent answer Texas 2 stepper!!! I use Crisco (not the oil, the type in the tub, buy a small amount if you don't use it often, it goes bad and picks up smells)!. It can be hard to measure though, because it gets air pockets!. To alleviate this I use water: If I need 1C I use a 2C measure glass measuring cup and fill it with 1C water, then I add Crisco until it reaches the 2C mark, then pour the water out!. Works perfect every time!. My husband brings my cookies to work and the guys say "My wife's cookies aren't like this, they are so moist and delicious!." I tell him to tell them the Crisco secret and he says heck no, because he wants his wife to have the best cookies LOL!!! Www@FoodAQ@Com

First of all, do not use a mixer for your dough!. My mother's cookies always are light but crunchy-firm when she uses her Kitchen-Aid mixer!.
Mix the whole batch up with your hands!.
Bake as specified in your recipe, but watch them closely and remove them before they're done all the way!. Maybe a minute or two early, and leave them on the cookie sheet for a minute or two to cool!.
This way, they firm up, without getting over done, and are easier to get off the pan to finish cooling!.

Use Crisco, instead of butter!. Butter makes the cookies spread more, so they're thinner and crisper!. You don't need to adjust the baking time, which might make them undercooked!. Always bake cookies on the middle rack, and don't layer pans in the oven!.!.!.!.!.Www@FoodAQ@Com

When you're mixing the dry ingredients, add a box of instant vanilla pudding!.!.!.it doesn't change the flavor of the cookies, but does help them come out perfectly soft!Www@FoodAQ@Com
